Lying down, dd measures 84 cm and standing she measures 81cm. I've done both very carefully, so why the discrepancy? Which measurement would I use to know her centile?

i always do it lying down as she is more straighter than standing up

Yep me too. The HV did it standing up last time and she reckoned ds was the same height as 3 months before (when he was measured lying down) -
