Poppy Edith - Not a huge fan? What about Eden?
Poppy Violet - Depends if you like having 2 flowers in her name. I personally wouldn't
Poppy Beatrix - I don't like it
Poppy Mabel - I actually quite like this one but probably more Mabel as its own name

I feel like a one syllable middle name might go better

Poppy Beatrix of your choices. Poppy is a bit cute imo, so I like the idea of a “strong” or more serious sounding middle name for balance. Your other choices are also quite retro trendy, and since Poppy is a popular name too, something a bit more unusual as a middle name sounds refreshing to me.

Poppy Edith doesn't work well because the two names run together.

Poppy Violet is two flower names; not keen.

Poppy Beatrix is nicer than Poppy Mabel.
