Barring very strong personal preferences or cultural backgrounds which favour a different spelling, I would always choose the most common spelling to make things easier going forward so most people instinctively get it right.

Our dog was Molly when we rescued her, we changed it to Mollie. I think it looks nicer.

Mollie. I actually see it as more old fashioned and timeless as my mothers aunt born in 1912 was called Mollie.
