It partly depends on your surname.
Do you have any family names you want to use?
Or other names from your first name shortlist that you could use as a middle name? What else did you consider? Use one of those maybe.
I’d avoid a one syllable middle name. They just get overlooked.

No family names I like to honour.

We've a 2 syllable surname starting with M.

Sophie and Rosa are both lovely as middle names. Olivia is a bit of a mouthful after Isobel, so maybe not that.

Isobel Sophie would be lovely. I also think Isobel Rosalie would be beautiful. I think one syllable names would work well too. Examples: Isobel June, Isobel Grace, Isobel Clare, Isobel Jane , Isabel Rose, Isobel Hope and Isobel Kate. The three syllables in the first name, one in the middle and two at the end would be a good rhythm.

I have a regret about my DD's name which is that I chose a name I like rather than one that had family or cultural meaning. Most people don't use their middle names for anything other than an initial , so I now think it is nice to have an association.

I have an Isabel, she is Isabel Maisie, as that was my grandmother's name ( Maisie - not short for anything BTW)
