I would say Rezei and Resei differently, I still think Rezay is the best bet.

I think that Resei looks the most ‘real’. You can definitely use a s instead of a z.

I think Resai, Rezay and Rezai are the best. I would pronounce all these with a z sound. I was wondering about Resay but for some reason I would pronounce the s as s in this version.

Resai or Rezai would be pronounced Rez-‘I’ which is different

Looking at your post I like Resai.
But I would pronounce it with an s like Res-hi.
If you want a z sound, Resei or Rezei.

I know a similar surname from Persian which is written Reza but the a at the end sounds "o" as in "pond" (but written like this because thats one of the two A sounds in Farsi).

I think you're not going to find one way that everybody will get. My married and maiden names are fairly obvious and I have (had) to correct people on both, very frequently.

Go for the one you like the look of with the fewest letters.

Also have a look around for how other people with that surname spelled it in English and go for the most common. Google could assist there!

Rezay is the one that will give you a REZ-ay sound.
Resay will sound like Re-say
-ei and -ai will give an -eye ending

You have to decide which is the lesser of 2 evils ...

Using a letter you 'dislike' (Confused) to get correct pronounciation consistently

Or use s and have to correct a fair few.

Personaly I'd use Rezay to get pronounciation you want.

Resai or Resei could work but open to a lot of variations

Of that list, Resei is the version (with the criteria of not using a z) that gives you the closest pronunciation you describe (rosé but with an e in place of the o) but Rezei or Rezay would be less ambiguous.

I'm guessing by the last few that it's quite a gutteral 'R' but most native English speakers would struggle with that so maybe pick your battles.

For the pronunciation you've described I agree with pp that Desai would work if you want to avoid the z.
