Betsy is the usual spelling. Is there a reason you want a different one?
As someone who spells their life spelling out there name, I would go for the usual spelling unless there is a particular reason.

I know its tempting to be different, but the low level irritation of having to spell out your name every time is not to be under-estimated. I have a very straight forward surname, an everyday item. In the last 20 years or so an alternative spelling has emerged from the USA and now everyone is spelling my name that way. Grrrrr. They don't even ask. It is intensely annoying. Why saddle someone you will love to bits with that for the rest of her life ? Sorry if this seems over the top - had a couple of incidence very recently

Spelling rule: Betty needs two ts for pronunciation reasons: like jetty or Netto.
Betsy doesn't because the "s" provides the second consonant.

I can't be doing with people who spell their kids' names in ways that go against the rules of pronunciation (don't get me started on the ones who called their daughter Lilley[sic] and insisted it was pronounced Ly-lee)

Spell it how it is spelt! Why are people so desperate to be 'different' and 'unique' that they just spell words wrong?! Your child will spend their whole life correcting the spelling, why inflict that on them? Betsy is a lovey name, there is no need to misspell it!
