I would spell it Griff, well that's the way the welsh spell it.

I would pronounce it so it rhymes with stiff.

But if it were Griff, I'd say it as in Rhys Jones, so rhyme with stiff.

I've never seen Gryff but would pronounce it Griff. In Welsh that would sound out as Gruff to rhyme with Buff.

If you are in England, spell it Griff.

In Wales, the name is Gruff (pronounced Griff). Gryff just looks made up (which it is). Maybe short for Gryffindor?

Gryffydd is the welsh for Griffith or are derivatives of the same name. (Disclaimer I'm welsh but not welsh speaking but learnt a little a ling time ago)
Y can be pronounced u (as in up) and I (as in in)
For example ysbyty (hospital) is pronounced us but ee as I think it depends on where in the word the y is and what letters are around it so gryffydd would be pronounced gruff i th.
So gryff is pronounced gruff and griff is pronounced griff

I think there are two versions of the traditional name: Gruffydd or Gruffudd, both Gruff for short.
