Ideas for things to see/do in Sydney, Port Macquarie and Coffs Harbour

Hi, my DH is going to turn 60 while we are on a trip from the Uk to Australia for a family wedding (in QLD). We’re flying into Sydney, staying a week then driving up to Bris via 2 night stays in Port Macquarie and Coffs Harbour towards end of Sept. We’ve only visited QLD before as that’s where DHs family live.
I’m looking for things to see or do that would be suitably special for a significant birthday. We both love animals/nature, but not really physical stuff like diving etc. Any suggestions welcome, thank you!

I second the train tide out to the Blue Mountains. The most beautiful place I've ever been to . We found it an easy trip, although the train was quite busy.

It will still be Whale watching season so a whale/dolphin watching boat trip from Port Macquarie would be good. I had to Google seasons as I can never remember them but apparently that migration direction runs until November so you should be good. We live in Sydney but have done the whale watching thing from Port Stephens a couple of times. Watching a whale breach a couple of meters from your boat is truly awesome.

Bridge Climb is another bucket list thing to do although I have never quite brought myself to pay the money.

Afternoon tea at Gunners Barack’s in Mosman is a bit special and a bit off the usual tourist trail and of course a meal at Icebergs in Bondi is also a cool thing to do (apparently Jeff Bezos and his wife were there a few days ago 😂).

We chose the stops at PM and CH based on advice from my BIL who lives in Queensland but has done the road trip from Sydney.

No kiddos. I am really keen to see animals/birds/marine life, and coastal or hinterland scenery, the only issue being that I have limited mobility due to disability (so no scuba diving for me, sadly)

If you are in Sydney get the Manly ferry from Circular Quay. It’s a great way to see the harbour, and cheaper than going on a tourist boat. You could have lunch in Manley and get the ferry back again.
