Ideas for 12th birthday during trip to Sydney

We’re going to be visiting family in Sydney this August and we’ll be there for DD’s 12th birthday. We’ll be having a family meal at some point, but I’m looking for an idea for an activity for the day that she’d find fun.

Because we’ve visited a lot over the years, we’ve already done most attractions. My backups are repeat visits to Luna Park or Taronga Zoo, which I know she would enjoy, but I was wondering if any locals had any cool ideas I could surprise her with? Raging Waters would have been perfect, but closed in winter.

Unfortunately DD is very prone to motion sickness and vertigo, so I’ve already ruled out the bridge climb and any VR attractions. We’re based in north Sydney, but willing to travel.

I'll caveat that I haven't lived there in years and don't have children.

-Does she watch Home and Away? Day trip to Palm beach with a picnic lunch or lunch at a local restaurant?
-There used to be a seaplane from the harbour to the Hawkesbury and a restaurant there. Its likely very expensive though.
-Likely no good due to the motion sickness and more for older people, but a steam train journey? https://www.thnsw.com.au/events

I'm afraid I haven't helped but hopefully once some Sydney siders wake up, they might see this thread. Its currently 3am there!
