Can anyone explain what these are used for ? It looks like a collection of loose sheets of paper and bits of ribbon.

Just the joy of creating. Sometimes bits of detritus from the day - a cinema ticket or wrapper from a chocolate bar. Or just abstract art, playing with colour, tone, texture

I think they're the progression of 'memory books' but without having to buy specialist papers and accessories (which is good, environmently).

From a quick look online, my inner craft snob thinks they can be rather crap and low quality. Among proper bookbinders there's a long-existing practice of making books with repurposed papers which, if the materials are selected by someone with an artistic eye, can be very beautiful and in the category of artist book and definitely not junk.

Art journal and junk journal are quite similar. Look at YouTube videos by Arne & Carlos to get an idea. They are designers and use them for their inspiration.
