Help, really basic knitting question

I am learning to knit and trying to knit a striped bag. However, I have just realised that nowhere it explains how to change colour!

How do I start a stripe in the new colour? what do I do with the old colour? Cut it off? Tie a knot?

Cut off first colour, leaving a tail of about 6"

Start next row with new colour. it is a bit tricky for first couple of stitches, because of the loose end,and the stitches are sort of baggy.

When finished whole scarf, sew loose ends into scarf.

If you're doing narrow stripes of two colours, you can trail the tail up the side, and use the same bit again, to end up with fewer tails.

Hmm, I have 5 colours to use...I think I shall try knotting them and see how it goes.
Why oh why didn't I learn all this when my brain still worked?
