Sewing voile panels

I've had a quote for a set of voile panels for the bedroom which is extreme - over £300. It is expensive fabric - clarke & clarke 63% linen and 37% poly its not slippery its quite stiff and firm not like poly net. He wanted to do it 2.5 times with triple pinch pleat however I think this is too formal as would think 2 times would suffice with standard heading as plan to use eyelet curtains.

Back to revised plan - is it easy to sew? what seams? I think this is wide fabric 3m (needed width calc 2.4m). so no central join in fabric - bargin.

what recommendations do you have and have you completed a project like this before?

It should be easy to sew from your description...I'm no expert but at 3m wide and with 2.4 measurments, you'll have a slightly mean gather...I was told to double it always...or they won't look as good.

Also...more gather doesn't look formal....just luxurious imo.

It will have 'x 2 and a bit' gather, so plenty. Triple pleat isnt nec on an eyelet curtain on double pole imo.
