Best wool for chunky baby hats

Morning all,
Have taken up crochet and really enjoying it. Just finished a baby blanket and now wanting to try some chunky, fun baby hats. I've been using a 5mm hook but understand to get the chunky look, I need to use bigger so have bought an 8mm one from eBay. Now I'm wondering about wool. I bought just some cheap, basic white wool for the blanket. Dont have wrapper so no idea of its specifics, just an average wool. Should I just go for the same? Looking on YouTube, a video for chunky hats, she used 2 threads of wool at same time. I guess that would work?
I have no idea about wool weights etc. google is to confusing! Can someone explain or just point me in right direction of what wool to use? In heading out to shop shortly, so will have a browse.

I made a jumper from Sirdar super chunky and it turned out really well, very quick to knit. Knitted on 10mm needles but would probably be ok on 8 mm hook.

You possibly need a step down from this though, yarn order (I think)

2 pieces of dk might work but would be easy to get the loops confused I think?

My local shop didn't have a huge selection but got a few dk balls. Think I'll need to wait for bigger crochet hook to arrive to get the desired chunky look
