I like cucumber and watermelon and squash but agree entirely about courgettes.

Try butternut squash cut into chunks and roasted with some herbs.

Or slice it in half and scoop out the seeds, put a bit of olive oil and some salt and pepper in it and roast for a bit. Meanwhile, caramelise some red onions and mix them into some cream cheese. Stuff the cavities of the mostly baked squash with this plus some fresh rosemary and roast a bit more. Lovely.

I'm totally with you on the courgette front, but pumpkins and squash are FAB. Roasted, chucked in risotto, in soups, everywhere!

They can look very pretty though. I went to my Mum's last week and she had some squash in the window sill given her by a neighbour and they made a nice display!

I have nothing against courgette cooked in a ratatouille or slowly with a little butter.
Can't say I have ever tried squash and I believe the only pumpkin I have eaten is pumpkin pie and I was a bit underwhelmed by that.

Leave cucumber and melon out of it though!! Well OK fair enough water melon is a bit tasteless but I adore charentais melons.

I'm addicted to courgettes at the moment.

courgettes are one of our staple foods - we have ratatouille nearly every night.

We grow the nice yellow ones on the allotment and they taste luvverly.

Courgette is nice in something. I have just made a batch of spicy pasta sauce containing chorizo sausage, tomatoes, onion, garlic and courgette. It is delicious!

Cucumber is a refreshing crunchy guilt free nibble - I don't mind the lack of flavour.

Can't get excited about watermelon sadly.

Pumpkins and squash are okay but again have to be in something, not on their own - my friend makes a lovely spiced pumkin soup every halloween - delicious!

i guess they r all a bit, well, squishy. is it a texture thing for you? whizz squash/pumpkin etc into soup if so. or do a thai veggie curry w coconut milk chilli garlic ginger etc if u don't like taste

Courgette is a yummy vegetable, don't over cook though. Cucumber is something designed to bring out the flavour of other foods in a sandwich.

The vegetable marrow however exists for display purposes only at harvest festivals.

OP - are you me?! You have named and shamed the only foodstuffs I actually cannot eat.

Cucumber - vile. If it's been in a sandwich/salad it taints the whole thing even once removed. Even if I wasn't pregnant I could smell it from 100 metres away.

Watermelon - no way could it pass my lips. Awful awful awful.

(Disclaimer - am ok with pumpkin, squash and courgettes)

Made a lush veggie lasagne with squash the other week.

Soups are also great with those veggies.

A salad is not a salad without cucumber.

Courgettes are great but I would agree they work best in something - I like 'em steamed too but you have to get them just right, not overdone, so it's a bit trickier.

Squash needs to be roasted and you're best off if it's a good organic one as it will make a difference to its taste. I wouldn't bother with it any other way TBH.

The trick with watermelon is that it has to be a really nice hot day and the watermelon has to be nice and cold. I have heard people speak highly of poking a hole in the rind, pouring in vodka, and then freezing / chilling it, but haven't tried that myself...
