Can see if you're asking your parents or buying for a child and need ideas.

Got a detailed list from SIL with her various requests, including the store, product numbers, colour, she even said don't get vouchers! One item was sold out online so it was kind of implied to go around checking if they had it in store. Just sort of feels like personal shopping and ruins the whole point of Christmas gifting. Or maybe I am BU and its better to give people exactly what they want?

YANBU. Your SIL sounds extremely immature and greedy, not to mention entitled.

This behavior would get her eliminated from my gift list immediately. Problem solved.
