Yes fresh pasta is good sometimes, but overpriced 'fresh spaghetti' with added shite is no good to anyone. Dried pasta is often so much better.

my kids love the 'fresh' stuffed pasta though

TheDevilWearsPrimark · 27/01/2009 12:24

Oh stuffed is fine, I buy it all the time.

I much prefer good quality dried pasta.

I don't think one is better than the other - they are completely different, and apparantly you're "supposed" to use them in different ways (read that in some Italian cookbook but not sure where).

I agree that fresh does go soggy very fast though, so I actually tend to fry it in just a little oil and add just enough water to let it fill out. Gives a lovely textured pasta that way (usually do this will the filled stuff), with a nice bite to it.
Mmmmm, making me want some now!!

I once spent over an hour making fresh tagliatelle. It tasted exactly the same as bog standard tesco dried. Fresh pasta is definitely a con unless stuffed...even then it is usually either chewy or soggy, and filled with dairylea triangles mixed with breadcrumbs and green bits.
