It's not that hard - just tell him what the choices are. My dd does not eat cheese or tomato sauce, so that would rule out everything except the toast from your list above. I think you are making hard work out of it.

I had a cub scout that wouldn't/couldn't eat the meal we prepared of jacket spuds, cheese, tuna, baked beans and chicken drumsick thingies. He turned his nose up at my offer to scoop the potato out of it's skin and take the chicken off the bone claiming he was a vegetarian (so why didn't his mum mention this at parent's camp low down?). He said he could manage a ham sandwich though as a favour !! Turned out mum had packed a huge packet of gingerbread men that he wanted to eat for supper. Not on my shift!

My DS would hate all those things but YANBU to feel frustrated, I do frequently!
