To ask what I can add to my meal prep next week?

I’m on a health kick and meal prepping. I’m planning on making the following:

  • baked oats - using oat flour, protein powder etc
  • a beef curry with cottage cheese “naans”, made with cottage cheese and flour. They come out around 90 calories per naan apparently
  • one day next week I want to make a low calorie pizza - I’ve seen a recipe that uses vital wheat gluten to help up the protein and lower calories
  • I want to make a sweet treat - maybe protein bites

I’m stuck on another meal I can make to swap with the curry for lunch and dinner. Any suggestions would be welcome! I will take fruit and one other snack to work as well (popcorn etc., low calorie). My focus is more fibre than protein.

A super easy one is to roast a hunch of veg in one tray e.g butternut squash, red onion, peppers, tomatoes and courgette. When also done, add a block of feta cheese and bake again for another 10-15min and serve with couscous

I’m not a huge fan of couscous 😅 and I want really warming, cosy meals for the week because the weather is awful!

Stir fried veg with brown rice. Add cashews if you want more protein.
Why are you adding protein powder if it's a 'health kick'? Surely healthier to have more whole foods?

The roast veg sounds good even on its own actually! Just need loads of it.
How about shakshuka - onions, garlic, red peppers and cumin/coriander simmered in tinned tomatoes, then break eggs into it to cook for the last 5-10 minutes. Serce over brown toast. Those cottage cheese naan sounds great!

I’d say my diet is 95% whole foods at the moment. I’m trying to eat 100g of protein a day minimum, 30-35g fibre, plus fruit and veg and 4l of water! I’m happy to add one or two processed thing a day in order to up protein.

Cauliflower broccoli and potatoes, sliced with a mandolin, put on a tray lined with baking paper, drizzle with oil and sprinkle liberally with parmesan and salt and pepper and bake for 40 mins. Lush and healthy

Endless soup options. Roast root veg and red lentil, chicken and vegetable, split pea and ham etc. Sprinkle with some nuts and seeds and a drizzle extra virgin olive oil.

Chai seeds and flaxseeds in your oats.

As pp said, roast a big tray of veg. Mediterranean veg rossted and then mixed through some mixed beans and with a herby dressing and some feta is very good. Roasted broccoli or brussel sprouts also surprisingly tasty and layer it up with some protein.

Omelette with spinach, tomatoes, mushrooms etc.

Ramen is also super comforting and you can have a base of decent bone broth and pack loads of veggies in there.

A simple Dahl or lentil stew.

Maybe a chicken and Mediterranean veg traybake? As is one day, then add some passata/ jarred sauce and pasta for the second meal...

Chilli with any number of canned beans, canned tomatoes, peppers, onions and spices, good for batch cooking for the freezer. Use brown rice if you want, I wouldn't.

Add avocado, cheese, salsa and Greek yogurt, which is a good substitute for sour cream if you want to avoid buying too many different things. Can also add beef or pork mince and/or chorizo.
