I’m hosting a barbecue for four other people, so five in total, next Saturday evening.

I know I could do the usual sausages and burgers, but for people who do a bit more, what would you do? No vegans or vegetarians. I don’t think salads would be eaten or at least very little.

I’ve got a coal barbecue and I am hosting alone, partner is not invited coming.

I'm in the US, as I assume you probably are too.

What we call grilling, folks in the UK call barbecuing. It has nothing to do with US barbecue. (Incidentally, when they see grilling they mean broiling.)

Exactly. And in the UK we generally don’t ever talk about “broiling” anything. It’s not a term we generally use.

(In my head it sounds like “boiling” and I just imagine it means boiling in a big dramatic cauldron! Can’t square it with grilling at all!).

Sound fab! Do you par boil first?

Yes probably best but you can without if they’re the smaller ones.

Oh yeh…what beef is best then? I find some of it quite tough x

Sirloin or ribeye would be best for cost/taste ratio, with ribeye having the most flavour but more fat/marbling, which adds to the flavour and helps the meat not dry out.
Fillet the most tender but more expensive but also easier to dry out and not as tasty due to less marbling.

Thank you. I love fillet steak. Maybe I’ll try that. Thanks again x

If they all eat red meat I'd go for a large rib of beef and BBQ that. It tastes gorgeous and looks impressive too. For sides I'd do 1 warm salad (a pasta / couscous / rice salad) and 1 cold (I like cubed cucumber, watermelon and feta with fresh mint).

An easy dessert is to get some bananas, cut a slit in through the skin and sprinkle in some brown sugar and rum then wrap in foil. Cook them on the cooling coals while you eat the main and serve with a posh vanilla ice cream. It also works with fresh peaches, plums, nectarines (cut in half, remove the stone and wrap in foil)

Squish a blob of marzipan into a nectarine stone cavity, press the two halves back together and wrap in foil. Bbq until til soft . Serve with good vanilla ice cream . I rally need one now 🤤
