I have had a gas hob for years, and all of the burners still burn far too hot even on their lowest settings to properly do a gentle simmer. It does my head in!
Well! I just learned that if instead of turning the hob down to the lowest setting, you turn (slowly! while watching to make sure it stays lit) from the max setting back up towards the Off setting you can get the smallest wee flame imaginable.
I am not exaggerating when I say this revelation is going to change my cooking life 😂
Or does everyone know this already and I’m just a moron?!
