Gender is the stereotypes associated with a person’s sex.

Gender critical people say that a woman is an adult female human, regardless of whether she is a pink-loving fashionista or a petrol-head football fan. Similarly, gender critical people say that a man is an adult male human, regardless of whether he is a pink-loving fashionista or a petrol-head football fan.

Genderist people say that these stereotypes are more important than biology in defining what a person is.

Gender critical people disagree.

TLDR:

When it comes to how people interact,

Genderists: gender and your own opinion of yourself are more important than biology.

Gender Criticals: biology - ie sex - is what matters and gender is, at best, personality, at worst, imposed stereotypes.

It’s another term for sex realist. People who recognise there are two sexes - male and female - and that biological sex matters.

For example a gender critical person would not consider it appropriate for a biological male to attend a women’s rape crisis meeting, even if that male identifies as a woman.

In short, it means sane.
Genderists: your own feelings are more important than objective reality. "I was born with a penis but I feel like a woman, therefore I am a woman." "I FEEL I'm a tomato, therefore I AM a tomato."
Gender critical: a ( unreasonably negative) term for people who believe in biological sex and objective reality. That if you're born with a penis, you're a man. You can be the most gentle, non- stereotypical man ever, but you're a man. The idea of doctors giving drugs to confused young people to delay puberty or alter their sexual characteristics, is horrific to gender critical people. The idea of performing mutilating surgery on healthy people in order to make their bodies conform to the nonsense in their heads, eg chopping off the breasts of young women who think they're men, is horrific to gender critical people.
And just to be clear, when I say the nonsense in their heads, I'm not blaming them. They are victims of nonsense, enabled by people/ an establishment who should know better.
I recommend you watch the films "What is a woman?"
