To eat an Aldi baking camembert a month past it's use by date?.

From my very recent experience - I wouldn't. I had one 2 weeks out of date, looked and smelled fine. Baked it and the colour was a little different, smelled like strong brie, tasted strongly of ammonia. Binned it and panicked for a few hours in case I'd poisoned myself, thankfully I didn't get ill!

However, was that the one with chorizo? I'd be more worried by a meat product that far out of date, than cheese

Yeah I wouldn’t worry about the chorizo. It’s cured. The whole point of curing meat is to preserve it.

I have a little festive cheese board still pristine in the fridge. Looks the same as the day I bought it, can't quite bring myself to throw it a2ay.

I had one last year that was about 2 months over when I opened it.

What brand is it, is it the one on the black plastic tray?

I think I'm right in saying that all Camembert is pasteurised at the moment because of the listeria problems in France. I'm pretty sure the shelf/fridge life is much more flexible than whatever sell by date it has on it.

Re chorizo, I'd assume that it's chopped chorizo inside the cheese. I think the shelf life of that is shorter than the anything that's not sliced or chopped.

Last weekend I made a big macaroni cheese with all the leftover scrag ends of Christmas cheese that were all still lovingly wrapped up in little packages but were realistically going to get forgotten about and go (more) off. It was incredible. I didn’t include the blue cheeses to spare my non blue liking family (ate them separately) but it had ash goat cheese, manchego, a blob of brillat savarin, black bomber, some fancy red cheese, and a knobble of another ordinary but good cheddar.

There’s a big slab of Brie in the fridge too but we’re saving it. My son suggested wedging it whole in the middle of the macaroni cheese. Anyone ever tried that? Baked cheese within macaroni cheese?

Not a cheese person so can't comment on a camembert but im pretty set by 'use by dates.
'Best before' means it won't be 100% (ie loss if taste etc) but will not harm you if eaten.
'Use by' means there is a risk to health if eaten after the date (obviously vould be extremely minor)
I do agree that the look/smell testing is a good base as well. Ive thrown stuff away that was still in date due to smell/texture when opened.

Subject to it looking and smelling fine, I would, yes.

I firmly believe that evolution gave us the tools we need to sense when food is gone off.
