I got into making sourdough a few months ago and never really nailed it. Got tasked with making a cheddar loaf for the buffet today and it’s turned out perfect.

My only critique is the flour on top, I flour my bannetons too much! But I’m very happy (and very excited to make more this weekend)

It’s typical that the one I didn’t really pay attention to has turned out the best 😂 I was running from the table to do the stretch and folds

About a day or so. You can cold proof for longer though, I did mine from about 6pm last night to 8:30 this morning

I find the ones that come out best are the ones when I leave the stretch & folds for longer in between than you’re meant to… I normally do mine on a Friday when I WFH and have a lot of online meetings so I’m doing it with an hours gap in between rather than the 20-40 mins!

I always find mine go best when I do the bulk ferment in the dough proving setting. My house is too cold otherwise!

I think the most important thing is an active starter. I did 475g bread flour, 350g water and 100g starter with 10g of salt added after the automate

Awesome. I’ve been baking sourdough for a year. I made a walnut and fig one for the cheese board yesterday.

Parmesan and black pepper is one of my favourites.
