Hi everyone.

DD is in bed and I'm sat on the sofa currently scoffing a bowl of sketty hoops and grade 6 cheddar cheese. Ya know the one. Strong, gritty, salty.

it reminded me of a conversation I had with my best friend a few weeks ago. She has rather, how can I put it, juvenile taste buds. A slim suggestion of Edam and she would cower.
she cooks from scratch, as do I. She buys grade 1, occasionally pushing that boat right out, grade 2.

what in the finest pardon is that? I always assumed the pussy cheeses mild cheeses were for kids. Until I had my own child who will take chunks out of my black bomber. I cannot imagine making a béchamel for my lasagne with, effectively, milk?

AIBU? Are you a mild cheeses eater who buys the grade 1 or 2?

I fucking love cheese and I guessed a lot of mumsnetters do so thought I'd start a thread.

I live near a cheese factory that has an on site restaurant. They do an all you can eat cheese buffet. Cheese coma is real!

Where is this magical place? I need to go 😃

we gave in to the urge for mild a couple of years ago. It whips on basic pasta.

strong cheddar is for eating on its own but it’s not my fave. I like a taleggio, a good brie or camem. ALL IN on a soft goat in a salad.

edited oh yeah and Comte. Obviously Comte. Comte. I also enjoy large sticks of emmental laid against a large stick of carrot.

Mild cheddar would never cross our door, its extra mature always, even for the kids. However I do like a mild white cheese like lancashre or wensleydale from time to time.

I like mild cheese varieties eg, Cheshire, Wensleydale, young Lancashire, Mozzarella. They are all cheeses with a naturally delicate flavour. But I expect Cheddar to have some bite and am disappointed if it doesn't. That aside (and excluding monstrosities such as Dairylea etc) I love all cheese. White cheese, blue cheese, sheep's cheese, goat's cheese, Feta, Halloumi, sage Derby, Red Leicester, Double Gloucester, Reiver cheese from Northumbria, Red Storm from Snowdonia Isle of Mull Cheddar, smoked cheese..I love it all. If there was a religion devoted to cheese, I'd sign up. 💛💛💛🧀

DH likes cathedral city (I'm embarrassed to buy it let alone eat it) Confused which to me tastes of nothing. I like a gutsy mature cheddar and has to be a flavour strength of 5 at the least. I've got a Belton Farm Silver Fox on the go at the moment, it's rather nice and has that divine crumbly texture. Yum yum.

Kinda Co make a sharp farmhouse cheddar out of cashews which is spectacular.

I used to eat cheddar on everything and this is the only one I've found which is any good 😁

That could be improved. One board the same size for cheese, one half sized for assorted fresh fruit, one half sized for assorted vegetables to always include chargrilled artichokes/marinaded mushrooms, a mug sized receptable for chilli pickled garlic and a sandcastle bucket for olives.

What do people mean that's not healthy? It's literally a Massive Salad.

Mild cheese is bleurgh. Makes me gag. I was brought up on tangy Canadian cheddar. I was devastated when everywhere stopped selling it after Brexit. I now have the Aldi no 6 or if I'm feeling extra fancy, the M&S Cornish cruncher. Black bomber for Xmas. Also very partial to the not so strong Boursin. YUM!

Well mild cheddar is pointless but YABU to slander all mild cheeses, as if there's nothing but cheddar in the world!

Brillat Savarin, St Marcellin, Ossau Iraty, Beaufort (summer), all mild and gorgeous

Also usual reminder to take your cheese out the fridge 30-60 minutes before eating to let the flavours warm up.
