Meal fatigue

Hi all, I want to know if i am being unreasonable to have meal fatigue? I struggle with cooking at the best of times (unfortunately my children need to eat every day - who knew!) I have discovered Hello Fresh which has been a godsend with working and two children. I do try to buy seasonably and cook meals other than Hello Fresh.

However, I would like to know what recipes you swear by, for warm weather and something quick and easy? So hit me with your fave Summer recipes!

Rukmini iyers trays are very easy and nice to do swap ins and out. can do in the air fryer as well so even quicker….

I found more options on gousto than hello fresh. Maybe don't even sign up- just give their menus a browse

Ooh i love a good recipes thread!

Some of mine are:

Home made Tzatziki with pitta breads, salad and chargrilled chicken

Bruschetta with home made foccacia

Spicy sausage & chorizo tomato casserole with bacon parmenfier potatoes & green beans

Warm potato salad

Smoked salmon pasta with samphire

Lemongrass & spinach Chicken balotine

Chilli & lime prawns with shredded cucumber

I love seeing what fruit and veg has done well growing this year in the shop though and choosing what looks best and cooking around that.

Chicken breast with fries and rocket at the side. I add a splosh of balsamic onto the rocket and garlic butter onto the chicken. Fling some rock sea salt on the fries and serve with ketchup and mayo 😋

I swear if I ever win the Euros 💶 first thing I would do is hire a private chef and housekeeper.

I’ve just had a tuna sandwich using my homemade bread. It was delicious. I definitely had meal fatigue this evening.

last night I cooked a tray bake of chicken legs, baby potatoes, onions and leeks using garlic and paprika . I used the left over chicken and a potato in a salad for lunch

Cheese and fruit, salad combos….
-Halloumi, watermelon, green beans and pitta bread
-halloumi, peaches, mint and pine nuts
-halloumi, oranges, carrots, mustard dressing
-mozzarella and peaches with watercress and homemade croutons

I bulk up with new potatoes sometimes, but search for halloumi/mozarella and fruit salad there are loads of combos

cook pasta, adding some frozen peas and sweetcorn and/or carrot. Drain. Stir through with smoked salmon and cream or pesto. Very lazy dinner indeed.
