Sourdough starter

Hello I’m making a Sourdough starter in my Panasonic Breadmaker. It says to use within 1 week. But I thought you could “feed” sourdough starters and keep them going forever?

anyone either any advice?

I’ve been doing exactly the same thing recently (same machine!). I think their version isn’t quite a proper starter as it uses yoghurt and yeast to get it going but also their advice is oversimplified and I think means “you can put it in the fridge and not do anything to do it and it’ll still work for a week”.

I’m experimenting now with feeding their Panasonic starter with flour and water - seems to be working really well so far. I’m hoping it will make for a better loaf than just using the 24 hour starter.

I’ve just started one today. I did it last year but yada yada yada…I need a new one.

I’m following the same recipe as I did last year as it worked.
day one is 60g of whole wheat flour and 60mls of water in a jar.m

I’ve got a Panasonic bread maker and I use it to make the bread but not the starter.

Thank you both!!! Ok @DogwoodTree that makes sense. Think I’ll start with “just” using it when it’s ready. Then next time I make it I’ll try feeding it. Can I ask for instructions on what you do to feed it? Or shall I just follow something from googling?

I’m no expert - my plan developed from googling it - but I’m feeding it with a mixture of rye wholemeal flour and water in a ratio of 1:1:1. I used rye flour as that was what I used in the initial starter as per the Panasonic recipe.

so, yesterday I had 50g starter, and then added 50g rye flour and 50g water.

(I’m also doing a little experiment with another 50g of starter where instead of rye I feed it with normal bread flour, just in case that’s better or worse. I’ll let you know!)

When it gets going and you are using it, you put half of the starter in your bread and replace what you have used with new bread flour and new water.

If you're making bread constantly you're feeding the starter every day. As I make bread weekly I pop it in the fridge and take it out and feed it a few hours before bread making.

Never heard of yoghurt for a starter, always used equal mix of rye flour and water.

@DogwoodTree can I please ask, with the starter from the Panasonic bread machine - what did it look like when it finished? I can’t find anything online. I have a few hours to go. Will it fill the cup? Or half way? I realise from looking at other sourdough starters it should be soft and bubbly, what I’m just does the quantity look like inside the panasonic cup?

It goes up to about halfway but it does rise and fall a bit. It smells strongly of alcohol and is soft and bubby. The longer you leave it the, softer and hubbloer it gets. I noticed that the bottom is firmer and stickier - I don’t know if it’s better if it’s soft and bubbly all the way down. I’ve been feeding my starter (as above) for a few days and it’s definitely more active and bubblier than it was after the first 24hrs in the machine.

I’d be interested in how your experiment goes @DogwoodTree . I have the same Panasonic breadmaker and have just started making sourdough . I have only made a loaf with the whole starter after 24 hours. I have baked my loaf in the oven after making the dough in the breadmaker as well as making the loaf in the breadmaker . How did your loaf turn out @PaigeInProgress ?

I have only made the starter. I’m going to take some and feed it and then also make the sourdough in the next few days so I’ll let you know!
