I always make:

batch of soup for lunch (not in Summer)
a couple of loaves of bread in bread maker
sandwich filler for the kids - tuna mayo, coronation chicken etc
green juice for me (on a weight loss kick)
overnight oats for teen daughter
used to make breakfast muffins but fallen out it
Chinese style pickled cucumbers - we make a massive batch which my daughters have with almost every meal think it is a social media thing

Just has become part of my routine and does make life easier

Curious what others do

What's the best vinegar to pickle red onion? Sorry if that's derailing thread.

A squeeze of lime juice and a generous pinch of salt does a cracking job of quick red onion pickle.

Thewalrusandthecarpenter · 05/02/2025 17:20

Oven on once a week for batch cooking:

Potatoes
Vegetarian sausages
Large bake with mushrooms, spinach, chickpeas, etc (makes four meals)
Boiled eggs on hob at same time

I do these pickled onions

Pickling is very forgiving, no need for perfection. The seeds make all the difference imo.

Pickled Onions

My chef's perfected recipe for the best pickled onions! The secret lies in the brine—perfectly tangy and balanced. Just 10 mins and 5 ingredients!

I make 4 loaves of bread at the weekend, and freeze 3 for the week.

I also batch cook something every weekend and freeze so there's always a variety of dinners quickly available, so bolognaise, tomato and veg pasta sauce, chickpea curry, mixed bean chilli or beef chilli, aubergine and lamb bake, etc.

If we have leftover meat from a roast we slice and freeze with lemon or lime juice, garlic, ginger and chilli ready for a stir fry, or mince it to make a cottage or shepherds pie.

And I bake oat bars every few weeks, slice and freeze individually. They're good for breakfasts or a filling snack. I use oats, peanut/almond butter, some cooked, mashed fruit, usually apples or pears, and some nuts and/or seeds.

When I have plenty of time I make preserves such as chilli and garlic sauce, chilli jam, piccalilli, gooseberry jam, etc.

I love some of the ideas on this thread and may add them to my list.

Peclet · 05/02/2025 17:28

Batch cook and in the freezer
chilli con carne
bolognaise sauce
compound butter

In the fridge
ginger shots
pickled red onions
roasted chickpeas
hummus
chopped herbs
salad dressing

Georgyporky · 05/02/2025 17:28

I make a big batch of caramelised onions, then freeze in small pots.
They'd last in the fridge, but I'm usually only cooking for 2.

Same as a basic tomato sauce, & Chinese brown sauce.

Oat pancakes, ds eats them when he gets in from school. I make a massive batch of them on a Monday and keep them in a tub in the fridge.

Sorry to sound dim but what's your recipe? I've never been able to make pancakes that's can last either a fridge or a freezer

Hedonism · 05/02/2025 17:37

Cake.
Soup or salads or dhal for my lunches during the week.
More recently, puddings, e.g. an apple crumble or a bread and butter pudding, which will last 2 or 3 days... because my ds is a sporty teenager and is never full.

I like the pancake idea.

orangecocoa · 05/02/2025 17:39

Batch of tomato sauce
Focaccia
Bean salad in Tupperware
Crostini
Cooked pasta ready for quick heating
Usually a soup too

AdoraBell · 05/02/2025 17:41

Bolognaise sauce here too. Not always with pasta.

heyhopotato · 05/02/2025 17:42

I've never seen anyone make nice bread maker bread.

Toomuchleopard · 05/02/2025 17:56

I make a ham every week from a gammon joint and slice it ready for sandwiches.

Meadowfinch · 05/02/2025 18:17

I make my own wholemeal bread (by hand, not using a bread maker).

I don't like flabby blotting paper bread in plastic bags so I spend about half an hour on a Sunday morning making enough bread for ds and I for the week.

I also make some variety of vegetable soup.

And a large batch of tomato sauce to act as a base for pasta dishes..

HarrietJonesFlydaleNorth · 05/02/2025 18:22

Soup
Coleslaw (teenage DS eats it with everything!)
Hummus
Cakes or cookies or flapjacks
Bread
Naan

That's what I usually make to just have knocking around for people to grab whenever.

Brumchum · 05/02/2025 18:24

Soup and banana pancakes.

OnyourbarksGSG · 05/02/2025 18:32

I make my own sauerkraut and kimchi once every 4-6 weeks as I love it as a side with noodles and veg for lunch. I bake a fresh sourdough loaf every week and also tend to do a big tray bake at the same time. Either carrot cake , jam and coconut sponge or lemon and sultana. I make up sandwiches and freeze them for my DHs packed lunch… I tend to buy whoopsied extra nice sandwich meat and rolls for this so no set day for this, just when I see bargains. I tend to do a soup the day the bread is baked and we have that through the week.

TheLadyIsAVamp · 05/02/2025 18:35

@GreyWasp how do you do the cucumbers please? 😊

Mum2jenny · 05/02/2025 18:38

ItGhoul · 05/02/2025 16:19

Nothing.

Batch cooking's fine if that's your thing, but I just prefer to be spontaneous about what I eat and I don't like preparing stuff in advance.

I’m with you, I decide on the night what I’m cooking.

Energy balls - great for after gym but also super practical if I am e.g. out of the house early and cannot eat

Overnight oats or chia seeds

Fruit compote - take a carton of whole frozen berries and stew in a couple of inches of water whilst stirring. That's it, although can add a bit of demerara sugar. Great on porridge, oats, anything really. And you can freeze.

Gram flour pancakes - 100ml gram flour, 150ml water, some salt and cracked black pepper. That's it and can be used for mini savoury pancakes with veg/ mushrooms, ideal for quick dinner or breakfast.

Also boiled eggs

And toasted nuts - whole roasting tray of nuts done on 140 fan oven for 45 mins - keeps us going for ages and easy go to snack

DH makes hidden veg pasta sauce which we keep in freezer, does for pasta obviously but also pizza.

It really helps me avoid processed food, if I have a few of these to hand. Esp with working FT and travelling, it makes it so much easier.

pizzaHeart · 05/02/2025 18:54

Homemade bread.

BigDahliaFan · 05/02/2025 19:10

I don’t really batch cook as I never fancy it after.

but if I make soup I’ll put a leftover portion in the freezer. I will make a batch of dal.

I’ll make a big bowl of pinhead oatmeal porridge and heat up portions in the week.

I make a bit more roasted veg and it’s handy for an omelette….

RaspberryCombat · 05/02/2025 19:13

I have nothing to add except tons and tons of respect for you OP. What a great use of time and also making a huge contribution to your family’s health. 🙌
