She poured the marinade that the raw chicken had been in on the cooked chicken and served it

Just that really.

Chatting to my lifelong friend while she was preparing dinner for her kids and that is what she did. She took the cooked wings out of her air fryer and poured the leftover marinade over it and served it to her kids. I was so taken aback and said oh you shouldn’t be doing that- it will have raw chicken germs all over it.

She looked at me like I was absolutely mad and said that’s how her mum always did it and the marinating chicken had been covered in the fridge so it was fine. I weakly said I didn’t think it was fine and she just laughed.

It’s not fine is it? I’s not going mad am I? She’s such a better housekeeper and cook than I am that I’m actually beginning to doubt myself! It’s so crazy- I ate at her house hundreds of times at a kid and I am certain her mum wouldn’t have done this. Is this a sliding doors of knowledge moment where she missed something fundamental? She’s like Martha Stewart and this is all completely mad.

As far as I am aware, her kids have never had a bout of food poisoning.

  1. Yes, the chicken was definitely raw when it came out of fridge and went into air fryer
  2. I don’t know if the marinade was from a jar, pre cooked, high in vinegar etc but I don’t think this makes any difference- surely it’s not safe once it’s touched the raw chicken
  3. I am certain she didn’t heat or nuke in the microwave the leftover marinade in the dish. We were chatting in the kitchen the entire time
  4. yes, she poured the leftover marinade onto the hot chicken- about a tablespoon per plate for her kids.
  5. No, I am definitely not showing her this thread. She would not take it in good humour and I could hardly blame her
  6. I’m looking at the links that PPs have provided and might flick her one- not in a ha, look I was right and you were wrong way but more a this is what I was talking about way- what do you think?

Number 6 is a great idea. You are being a good friend by being concerned and doing something about it.

OP, even though it might be awkward, I think you do need to bring it up again. How about something like:

"I managed to confuse myself over the chicken marinade thing earlier and wanted to sense check myself so i had a google. It does seem like it's pretty risky and not advised to eat marinade that has been in contact with raw chicken. If the marinade is not also cooked to boiling point, it will contain traces of raw chicken juice and being refrigerated doesn't change that. I wouldn't have brought it up again, but I'd hate for you guys to get sick with any of the things associated with digesting raw chicken, so I hope you don't mind me forwarding the couple of things I've read" (and add one or two short but well sourced references.)

Oh bike - when I was a child my entire family got really ill from eating bad chicken. It was the most ill I have ever been. The sickness went on for days. I was so weak I couldn’t lift my head. My mums friend gave me my first ever drink of Lucozade. It gave me such a lift.

I’m paranoid about chicken now. I bleach the kitchen, door/ oven handles etc as soon as the chicken is put on to cook.

Same! I'm happy to eat past use-by dates pretty often, and generally fairly relaxed about many food 'rules,' but NEVER with raw chicken, which is what she's literally serving up.

As with pp, I often use the marinade, but always thoroughly cooked!

Yeah, grim. Only way it would be okay was if she cooked the marinade first. I don't know how hot you'd have to get it to be safe, but when I do this I cook it until it literally boils.

It might be worth asking her if she knows for example that you can’t chop up raw chicken on a board, then put the cooked chicken back on the same board without washing it in between. If she knows that then she is clearly just not thinking through what the marinade actually is. If she doesn’t know that, start googling “food hygiene courses in my area..”

Google's being a tad over-cautious there, though. Reserve a portion of the marinade to use as a sauce, separate from the raw chicken marinade - fine. Then it tells you to boil it - that's unnecessary.

You obvs should boil the marinade you soaked the chicken in, if you're going to serve it. No need if it's never touched the raw chicken.

What was in the marinade? Some substances like vinegar & other acids like lemon juice can kill/prevent bacteria including campylobacter (thus why pickling things preserves them....). Alcohol can also kill campylobacter in one minute.

Its clearly crappy hygiene but i suspect modern antibiotic use, vaccines and hygiene standards around meat packing/prep in Western countries means this is probably lower risk than you might think

Maybe, but it's a lot of risk for the benefit of what? Pouring some room temp liquid over hot chicken? It would be nicer cooked, let alone definitely safe.

I wouldn't take that as in boil and continue to boil as in reduce, but heat to the point of boiling bubbles etc then it's done. Google can't be too cautious, it has to play to the the most litigious indoviduals and go by the literal translation or get sued by someone who did exactly what Google said and it went wrong 😅

I would never eat anything from her kitchen again. That is so many levels of wrong and dangerous.

I like to think I'm pretty careful anyway but I am very careful with raw chicken. Your friend is seriously risking the health of her family. Even worse, what if she makes that dish for visiting children or takes it along to a party or event?

Definitely. This is one of those situations where you are being a good friend even if she doesn't think so. One of her kids could end up in hospital very easily if this continues, in fact, I'm surprised they haven't been extremely ill before now .

Does she not see that what she did was akin to puring the juices from the meat tray she got the chicken in, over her cooked chicken?? Like others some are completely OTT on herr about food and washing etc but this is awful. We do the plastic chopper for raw meat only too, just keeps things in check easily. Marinade I pour onto pan over chicken before cooking and cook together.
At 18 in uni we knew raw and cooked meats don't ever mix.
Maybe 10 years ago near me in Ireland a woman died from chicken at a Communion party, caterers had provided the food.. awful. Many others seriously unwell.

Otherwise, that’s beyond foolish. I’m amazed her kids haven’t been sick. I’ve a cast iron stomach but I wouldn’t touch it.
