She poured the marinade that the raw chicken had been in on the cooked chicken and served it

Just that really.

Chatting to my lifelong friend while she was preparing dinner for her kids and that is what she did. She took the cooked wings out of her air fryer and poured the leftover marinade over it and served it to her kids. I was so taken aback and said oh you shouldn’t be doing that- it will have raw chicken germs all over it.

She looked at me like I was absolutely mad and said that’s how her mum always did it and the marinating chicken had been covered in the fridge so it was fine. I weakly said I didn’t think it was fine and she just laughed.

It’s not fine is it? I’s not going mad am I? She’s such a better housekeeper and cook than I am that I’m actually beginning to doubt myself! It’s so crazy- I ate at her house hundreds of times at a kid and I am certain her mum wouldn’t have done this. Is this a sliding doors of knowledge moment where she missed something fundamental? She’s like Martha Stewart and this is all completely mad.

As far as I am aware, her kids have never had a bout of food poisoning.

I'm starting to agree with those people who say never, ever eat anything home cooked that you haven't actually watched bring prepared!

I don’t really get it, if you have leftover marinade surely you’d just pour it over the chicken (and cook it) or perhaps heat it up separately to make a sort of gravy

why on earth would you pour it on cold? And eeeurgh!!

She needs to keep some untouched marinade aside (in other words keep a portion that has NOT been in contact with raw chicken) to add at the end of cooking, or she needs to cook the chicken and marinade after pouring it over.
Could it be this? The had a separate tub of the marinade on its own? Or did you definitely it was what the chicken came out of? Some people are weird about how they cook, refusing to see past 'but this is how I have always done it'.

I mean sure...it's possible in theory that the marinade is made up of ingredients that make it sufficient to 'cure' the chicken juices. But I'd still not take the chance, personally.

Well her mum wouldn't have had an air fryer- it will have been in a dish in the oven. And I bet the marinade went in before the end of cooking time to be cooked through. YANBU.

Honestly, just when I think there's nothing left to surprise me about people's food hygiene knowledge (those "warming up" previously cooked meat to less than bacteria-killing temps was the last one that amazed me, and I think it happens in pubs), along comes a woman who serves her children cooked chicken in a raw meat coulis.

I'm never eating at someone else's house again!

This makes me feel better. She is so much more knowledgeable than me on all things domestic and was so certain about the marinade being ok that I thought maybe I had it wrong all this time.

Argh. Should I raise it again? I raised it twice in the moment. I’m famous for my lack of domestic ability that I think she would disregard anything I had to say and just get irritated.

I think it's fine to raise it again. You could just say it casually along the lines of "remember I noticed this the other day and was concerned, well I checked as I really care about you and don't want anything to happen to you. I think the 'newest' advice now is to not use any sauces that have been in touch with raw meat as the juices will be raw and potentially contaminate with bacteria." You could send a link to the food standards website page with this info I think it's called the 4Cs of food safety: cooking, cleaning, chilling and cross -contamination.
If she's offended just brush it off . You're being a good friend telling her.

No, absolutely not good. It either gets thrown out or cooked. I’m no great shakes in the kitchen but would never do that. It’s no better than pouring raw chicken juice over it.

If she wants to eat raw chicken juices and risk being very very ill then that is up to her but she is serving it to her children, who have no choice in the matter! That’s so wrong

I'm generally in the "smells alright - fuck it, it's probably fine" camp when it comes to things like best before dates, but your friend is a different breed 🤢

I don't think you should raise it again. It sounds like you're right if she didn't cook the sauce but you've told her and she'll either reflect on it or she won't. She might have just been embarrassed once she realised but I wouldn't think it's my place to tell her again. I wouldnt eat there!

A quick poke and a sniff and I’m eating all sorts of crap, but I honestly think that’s the worst food related post I’ve ever read. Especially giving it to children. But then she simply thinks it’s ok, so that’s a whole different thing than being unsure😬
