If not much of a cook ! What would you cook if you wanted to make someone feel cared for but they don’t eat meat

Hello

I want to treat family who I haven’t seen for over a year. I want them to feel well cared for when the are with for lunch and dinner. So lovelies I not much of a cook 🫣what would you do ?

I have tried that too. i cook it for others along with the parsnips but just a bit too sweet/ sloppy/ school dinnery.

Happy to keep trying so do send through a good recipe!

@Recentgradneedingachance Another idea might be a roasted vegetable traybake: red onions, sweet potatoes, carrots, red peppers, cherry tomatoes, new potatoes, courgettes, broccoli, drizzled with olive oil beforehand and served with a yogurt and tahini dressing, or a lemon and herb dressing, or maybe with chunks of halloumi or feta scattered over the veg - very easy to do and not much hassle bar buying the food and the endless chopping that vegetarian recipes involve. There are umpteen recipes on the Internet, but Dr Vegan has one - he is a really good food blogger, and his green vegetable soup or tortellini soup with creamy tomato and spinach look simply out of this world - just put in a search with whatever ingredients you've got and find a recipe: Green Vegetable Soup | Dr. Vegan (drveganblog.com)

Aubergine is one of the most deadly ingredients. Get it right and it's ok. You might even get a few converts.

Wrong, as I have too often, and you end up with a strange and spongy oily mess.

I can't be arsed to roast them, so I just avoid them. Parsnips especially. Swede microwaved is edible at least.

@HereForTheAnimals , I had a meal cooked for me by someone who didn't realise that fish sauce wasn't. I'd said I didn't eat fish.

@words, try roasting the swede instead of boiling it. Same with parsnips, it changes the flavour and texture.

Ah @JustDeserts that's awful. I'm vegan but had a similar experience with cheese. The person told me the sliced parmesan was vegan, and I looked at it and was like no. I asked if they were sure, without trying to be a dick, and they reassured me saying it said vegan on the pack. I was thinking it might be a new brand and it looked great. As I put it into my mouth, they went 'look, it has the V sign on it' 🤣.

When I realised it was actual cheese, and had already chewed it to a pulp, I just swallowed and then explained to them that 'V' doesn't mean vegan. They were mortified, but I reassured them it was my fault because I thought it was too good to be true 🤣.

Quorn mince is great. You can make a chilli adding tinned tomatoes and bean salad or kidney beans or bolognase adding tinned tomatoes chopped carrots and mushrooms.

Veggie lasagne

Buy a bag of ready prepped Mediterranean veg, roast, cool and chop

Stir in a jar/tub or two of good quality tomato based pasta sauce

Layer up with fresh lasagne sheets (they cook so much better) and fresh ready made cheese sauce, finishing with a layer of cheese sauce. Swirl with pesto and add some fresh mozzarella then bake.

@HereForTheAnimals ,that's awful. People can be clueless, some of my friends didn't realise that lard wasn't vegetarian.

Pataaks curry pastes are amazing. I love making their korma. I use quorn peices, onion, peppers and mushrooms. But you could just use lots different veg

I knew a lady who had vegetarian visitors coming. ‘Oooh’ she said,’they’re vegetarian. I’ve got to think how to cook chicken for five days.’

Second mushrooms and garlic in cream on sourdough toast as a starter.
red onion tarts as a pp suggested. Nigel slater does a red oinion tarts tatin which is super easy and very impressive
