So, once a week I'll make a pasta and the sauce I make by myself. I roast loads of veg and blitz it in the blender with coconut milk. My two year old loves it, I love it and my husband loves it. Problem is, my 4 year old (who used to devour the whole plate) has now decided he hates it and refuses to eat it the last two times I've made it. Do I stop making it as it makes dinner time so stressful, or do I carry on making it as everyone else enjoys it and it's healthy? Making two separate dinners is just not an option as I also have a 3 month old and cooking dinner is hard enough as it is!

Yes, I'm not a massive coconut fan but I honestly don't think you can taste it in cooking.
We use it a lot with a vegan in the family and also a milk allergy sufferer (me) - usually use it in curries and smoothies though.
Never thought of putting it in pasta sauce! ❤️
Perfectly normal to put it in bakes and dishes.

Give him the pasta plus chicken, some sweetcorn out of a tin ( or cooked frozen sweetcorn) with mayo stirred through. Maybe a little portion of your tomato sauce with a little pasta on the side and/ or maybe a bit of salad.

Funnily enough, I was just about to catch a flight to Italy to let them know that coconut milk goes in pasta. Glad you warned me

my DD is gluten free so we have to adapt most meals slightly so anything we can all eat with no adaptations is a winner for me 🤣

This is the closest link I can find to my recipe, it's almost exactly the same as what I do so just change to normal sausages and tweak as you wish! I do everything at the top of my head.

I feel for you OP!

I wouldn’t call my kids fussy exactly but sometimes they drive me potty. One’s decided they hate cucumbers and the other carrots. So when I’m quickly making sandwiches to go I have to remember one filling with cucumbers and the other with carrots otherwise they won’t eat them if mixed. These are kids who used to devour both vegetables when younger!

I used to make a lovely meal of mashed potatoes, sausages and green lentils. Not mixed and they’d eat them nicely, suddenly one doesn’t like the lentils. I’ve tried changing lentils to chickpeas and one loves them but the other doesn’t 😓

For a snack one likes a whole apple, the other it has to be sliced… just eat your bloody apples!

Coming back to your recipe OP, I love it and am going to try it this weekend. In a rut about recipes currently so will give this a try.

As a PP suggested, give your kid pasta without the sauce and a bit on the side. They might change their mind at some point x

I would probably just not make this dish for a few weeks then reintroduce in a couple of months when he’s forgotten he doesn’t like it. It’s a bit samey to have any dish every single week and it won’t be too bad for those who do like it to eat something else for a few weeks.

My 4 year olds memory is short enough that he won’t remember saying he didn’t like something if I serve it a few weeks later!

This definitely. No fuss. It will all be forgotten soon enough.

It may be that he's beginning to react to the coconut milk, the garlic or the red peppers.

Mine hated cleaning his teeth. Then we found out he was actually now full on allergic to toothpaste 😱. His going off the sauce could be something to keep an eye on. Grated cheese on plain pasta should be fine.

Do a rough chop with all of the veggies etc and take part out of that before you completely blend it with the coconut milk. Serve that to the side with plain pasta for him and sprinkle some cheese on his pasta. Don't get in the habit of being a restaurant. You will never be able to go back if you make everyone separate meals.

Absolutely!
One red onion chopped in half
One whole garlic
One chopped carrot
Once chopped red pepper
One chopped courgette
One beef tomato
Spray olive oil and sprinkle salt and pepper over, roast on 180 for 25 minutes. Blend with half a cup of coconut milk.
Cook chicken and dice into pieces.
Half cook the pasta.
Coat the pasta in the sauce and add the chicken (top with cheese if you prefer) and put it in the oven for 20 minutes.

Was going to ask for the recipe too! This sounds absolutely delish! Will give it a go!

An answer is to give them an Iceland meal. Apologies to other retail outlets, I'm sure u can offer similar.
Plenty of meals, pasta or bakes which can be micro waved in 10 mins.

Give 4 year old plain pasta and the veg.

put small amount of sauce on the edge of the plate/in a separate bowl
