Does anyone seriously enjoy sourdough?

I just find the crust so tough and chewy. I always feel so undignified ripping a bite off like a wild animal, usually while the filling drops everywhere.

Posh, artisan type places seem to all love a bit of sourdough, I just don't get it. What am I missing?!!

What bread are you earting OP?
I personally fiund UK has the most disgusting bread in the whole of Europe (and probably the whole world right after the US) and sourdough is one of the only decent ones you can get that is edible.

i’ll throw it out there as a possibility

that one of the european countries you have not been…. has worse bread than the UK 😆

maybe you need to travel around the UK a little more?

42tabsaday · 14/09/2024 16:46

Bread is in the UK is pretty shit though - full of preseveratives, anti-fungus chemicals, stabilisers, emulsifiers - it really is not easy to find a decent loaf in a supermarket and we have very few bakeries that make anything other than the same shit you get in supermarkets. Sourdough is often better but it can still be full of shit. But if you don't like it I'm sure it's easy to avoid.

I'm coeliac so can only have the GF versions and GF bread isn't very nice but my DH & 2 DC's eat the Jason's one regularly, they do different types and DH says it's the best one. He said some of them are horrible and barely any sourdough in them. DC's like the plain white one which does just look like normal bread and DH likes the seeded one and I think it does look quite tasty, especially when toasted with loads of butter but unfortunately I'll never know! The Jason's ones have barely any ingredients in them too so much better for digestion without all the preservatives.

I've just bought the River Cafe GF cookery book, it has recipes for making GF starters for sour dough. Haven't given it a go yet.

Pickingmyselfup · 14/09/2024 16:47

Yes I had it today, the slow roasted tomato wholemeal one from the co-op with avocado, bacon and poached eggs. I find it feels more satisfying than just standard wholemeal bread.

Don't have it untoasted though or with anything else so not sure if it would hit the same spot.

AllTheChaos · 14/09/2024 16:49

I only have sourdough. Love it.

Oh thanks so much, will have a look at this! I have been saying for a while I would like to make my own but I am also a bit lazy when it comes to baking. I scratch cook but anything else is ready bought. I go to a farmers market monthly for the GF baker there and spend a fortune and always say to myself I need to try baking my own! My DD2 has just been diagnosed coeliac last week so this may give me the nudge I need!

It does look a bit time consuming, but I suspect no more time consuming than normal sour dough. The book looks good, I'm keen to try their pastry recipe too as I've not had much luck making my own.

Plus it's lower in carbs than 'normal' bread.

How does that work? Flour is carbs. The difference, if any, is going to be insignificant.

Sunshineandpool · 14/09/2024 17:59

I love sourdough and it is the tough chewy crust I love. Sourdough rye is my favourite.

brrrrrrrrrrrrrrrrrrrrrrrrrrrrr · 14/09/2024 18:07

Most breads you buy in bakeries (and supermarkets) in Switzerland and largely Germany are sourdough, because that’s the just the standard method of fermentation, rather than using industrial gene-modified dried yeasts and a buttload of additives to reduce the timescale.

I think they mean it has a lower glycemic index

Its entirely possible I mean that. Sorry, am in bed with the start of flu and my brain is fog.

Ive heard something like this too but it was more along the lines of blood sugar spike, just as potatoes impact your blood sugar less if you cook them then reheat them. Food science can be weird.

Calliopespa · 14/09/2024 18:47

I’ve just looked this up on bhf website. It is low GI despite a high carb value.

Oh yes sorry: reading backwards.

It is - amazingly - a low GI food.

The supermarket sliced bread that people think of as being “normal” bread is not actually proper bread. It’s a supermarket invention that was introduced in the 1960s (or earlier) and has all sorts of odd ingredients that you should not find in bread.

It’s all about what you are used to eating. My dd was chewing on hunks of sourdough when she was 12 months so that kind of bread, as well as heavier rye bread, is her normal now as a teen. We eat it not because we are “posh” or any other reason other than that to us that is bread - the supermarket stuff that comes in plastic bags is not.

"Hunks of sour dough" at 12 months? I would have thought that a choking hazard!

On average.
The nice bread I have eaten in the UK comes from Greek, Turkish, French, Polish, Italian, Spanish etc bakeries. Which I would not count as "British" bread.

Different breads suit different fillings/toppings.

This is true.

However, it does not apply to sour dough.

Sour dough is not bread.

It is the work of Beelzebub. A snare and a delusion designed to ensnare right-thinking people innocently shopping for a loaf in the bakery aisle of Sainsbury’s.

Pay no attention to those here who suggest otherwise. They are demons from the depths of hell, bent on the ultimate demise of the wholesome bloomer, the honest cob, the righteous baguette.

I’m not joking. Sourdough is the apocalypse disguised as a grocery staple. It will be death of the nourishing, digestible sandwich.

Think of your children. Consider your soul. Protect your heritage.

Sour dough is obviously and irreclaimably - evilly - horrible.
