Blue - probably because when I was a child I used to go shopping with my grandma and when we went to the butchers to get meat for the cats he used to give me a small piece of raw steak to chew on the way home. I loved it!

Well I never!! I thought it was blood too but Google tells me you are quite correct.

I like mine rare to medium rare. I don't mind the pink stuff that's not blood.

It's nice and tender and juicy and tasty and is a waste of a nice steak when it's not pink in the middle.

Usually medium rare but thin cut steaks are really tasty well done.

Medium rare. Cooked on a very hot dry cast iron skillet. Outside is caramelised and almost burnt, inside pink and juicy. Rested for longer than it was cooked for.

I like it cooked the way DH did it this evening - I think they were about medium rare, in butter.
The outside definitely needs doing enough for the Maillard reaction to work its wonders.

This thread has reminded me of a time I was told a pub wasn't allowed to serve steak blue! It was a chain but can't remember which. I asked them for the rarest the chef was prepared to chance and it wasn't too bad thankfully.

I usually do steak at home though given the difficulty/mark-up ratio.

Medium rare, though I prefer fillet which I had a few days ago. It’s not something I eat often but when I do, I really enjoy it.
I’ve read farmers and butchers ask for rib eye as they find it tastier.

Because after growing up eating incinerated beef in lots of different forms I always thought I didn't like meat

Rare, but with a good thick wedge of properly aged yellow fat along the edge, seared well so that it melts in the mouth.

Steak has to be room temperature before cooking
Fat has to be well rendered
Well oiled and seasoned with salt and cracked black pepper
Griddle pan has to be smoking hot
Cooked either Rare or Blue
And lastly not spoiled with a sauce!

Unfortunately, DP believes that tough enough to keep the dentist busy is exactly the same as very rare and on the one occasion I'd insisted on cooking my own (and promptly got dizzy, which is why he cooks) and had a perfect steak resting, in the time it took him to manage to boil some potatoes, I realised that the beeping wasn't for extra veg, it was him microwaving it FIVE TIMES.

So I don't buy it anymore.
