How to make chicken casserole?

Hi! Really not feeling great and feel like warm and hearty food. Does anyone have any recipe ideas for a chicken casserole without a slow cooker? I saw a video of chicken casserole on TikTok which had chicken (thighs I think) and veggies and potatoes in it and it looked so good but it used a slow cooker and didn’t include the recipe. Does anyone have any good go to recipes or tips? I’ve never made it before but for some reason I’m craving it now! I’ve actually got a casserole dish but I’ve never used it yet. Thanks so much x

Leaving potatoes in - yes, should be fine. I like to use the baby potatoes and chuck then in whole. Browning the chicken - lightly fry to get a little colour on them and whack them in the pot you are using. Onions and leeks - fry for 5 -10 minutes until they are soft. You can use baby carrots which again you can chuck in whole - or you can buy prepared carrot and swede in the fresh veg section at the supermarkets which are lovely. I always thought swede sounded horrible but I really like it. The other thing you can do if you are feeling poorly is use frozen prepared veg, bung it all in the pot and either simmer it on low on the stove top for an hour or so, or stick it in the oven on 180 for similar. I like to add pearl barley to mine, or soup mix which has that and lentils - adds some nice flavour and texture. And I find a dash of worcestershire sauce and/or mushroom ketchup is a nice additon, as well as a stock cube. The basic foil wrapped ones are lovely, but there are the stock pots you can add which are lovely and have a lot of flavour.

This is what gets me about chicken thighs, they often stay pink and can have a rubbery sort of texture. I agree they have more flavour than breast meat but I just can't get into them.

My mum's recipe was onion, garlic fried together then added chicken, shed joint one but I'd use bone in thighs. then a tin or two of tomatoes and about 5 minutes before it's done, about 45 mins add sliced mushrooms
