As easy, quick and family friendly as possible. Getting the nutrients in. The less pots the better! Friendly to fussy eaters!
What's your go to on those days you're just burnt out but still want to do a good job for your family?

Tray bake every time. Chop up some potato’s, thrown in some chicken, chorizo, red pepper, red onion and any other veg I have to hand and a load of seasoning.

Some of my go-to’s are:
Black bean burritos - fry onion, garlic, diced pepper, add fajita spice mix, add tin of black beans and tin of tomatoes. Simmer for a bit.
serve with rice and/or wraps, grated cheese, avocado, crème fraiche.

Omelette, crispy potatoes, Greek salad.

Pasta with roasted veg and chickpeas

vegetable stew with buttery warm baguette.

Roughly chop veg- literally anything. Sweet potatoes, butternut squash, pumpkins, carrots, onion, peppers, beets, tomatoes, etc.
Roast in oven with nothing on (oil isn't necessary) When softened, chuck in blender with stock cube, garlic, any herbs you have, salt and pepper. Serve! I sometimes do it in advance and warm it through in the roasting pan in the oven (no need for hob pot, that's just more washing up). I sometimes do it the night before, when the oven will be on for a long time (while cooking a roast for example) so you make the most of the electricity.

Sweet potato (or normal), pepper, red onion and sausage tray bake. Chuck it in the oven, add herbs and seasoning at the end. Mix through a good glug of a honey BBQ sauce and voila.

’Bolognaise’ - mince, 1/2 bag frozen soffrito, frozen garlic, tin toms, squeeze Tom purée, a stock cube and some herbs in the slow cooker for 4/6/8 hours on h/m/l. It’s nicer the next day.

Chilli - as above but with some frozen sweetcorn, a rinsed tin of kidney beans and your chilli spices of choice. Could use turkey breast mince too.

Roast a chicken. Have as is or turn into curry/ stir fry/ pasta sauce. A large chicken does 2 meals for us 4 and because it’s already cooked it makes making something chickeny very quick.

Salmon fillets covered in hoisin sauce in the oven for 20 mins with noodles of choice and veg of choice - If you use frozen veg it’s all in one pan.

Chicken nachos - tin toms, chipotle paste and your ready roasted chicken from above. Heat up and pile onto tortilla chips. Add cheese and microwave til cheese melted. Serve with sour cream, jalapeños and salad.

I’m just about to experiment with making a frittata in the oven - I might recommend that if it works as well 😁

Slow cooker! Fajitas, chilli, soup, Currys, all freeze for leftovers.

This thread is re inspiring me! Slow cooker is back out, made a couple of things from taming twins which went down well!
The less prep and less pots the better for me!

Brazilian chicken - 6 hours on high in the slow cooker.

1kg chicken breast
2 small red onions
1 lime - zest and juice
1 can coconut milk
100gms peanut butter
Enough tumeric to turn it yellow
pinch of chilli flakes
pinch of salt

Easy as a kick in the arse.

Serve with rice, also great in wraps with lettuce. Usually serves 4-5 adults and 4-5 kids at a time.

I’ve doubled up quantities before and frozen a batch.

Reckon this would work with chicken thigh?

Chicken and potatoes.

In a roasting dish place enough chicken pieces (thighs and legs are best) for your family, then fill in the spaces between them with small potatoes or chunks of potato. Over the lot pour a mix of olive oil, dijon mustard, coriander, honey, turmeric, sumac, pomegranate molasses and lemon juice. Bake.

I do this for my family nearly every week. You can change the spice mix to suit your own tastes also.

Spinach ricotta tortelloni in a sauce of plain yogurt, pesto and lemon juice.

Heat the tortellini and just dump into the cold mixed sauce. Wilted spinach added in is lovely but kids don't always like that.

That's been my go to Comfort food for 25 years!

You can put pretty much anything in a wrap, add cheese, fry it in a dry pan, cut it in triangles and call it a quesadilla.

Roasting Tin 'Chow Mein'

Chopped meat into a large roasting tin. Mix with a supermarket sachet of stir-fry sauce. Add a ¼ cup or so of boiling water from the kettle and cook at 180ºc for 10-15 minutes depending on the type of meat. Stir through a pack of prepared stir-fry vegetables and a pack of so-called 'fresh' noodles. Add a splash more water and a good shaking of soy sauce. Another 10 minutes in the oven sprinkle with a little toasted sesame oil and serve straight from the tin.

Lee Kum Kee (I hope I’ve spelt that right) do the most AMAZING chilli oil. It makes plain rice or noodles delicious in seconds. A fav here is instant ramen with stir fried veg, chilli and a fried egg. You can swap the ramen for rice and it’s just as good. Add loads of soy sauce, sesame seeds if you have them and tons of spring onion!

chicken thighs
1 cup rice, 2 cups stock
Mushrooms
Grated or fine sliced onion
Garlic cloves
Bay leaf
Salt and plenty of pepper

Brown thighs in large casserole pot with a lid
Set aside
Keeping the juices add the rice, garlic mushrooms, most of the onion, bay leaf
Arrange chicken on top, it should be only partially submerged
Salt and pepper liberally at this point
Foil wrap and lid
Cook for 45-1hr at 190C but remove the lid and open the foil for the last 10-15 minutes

Home made pizza, the base is equal thirds wholemeal bread flour, white bread flour and rye flour. I also add milled flaxseed and sometimes milled chia seed to it. Olive oil, warm water, yeast. The bread maker mixes the dough... Topped with tomato puree, grated mature cheddar, mozzarella, whatever's about like chicken or ham etc. Very quick to cook if you make the base nice and thin. Served with carrots/cucumber/pepper slices.
