As easy, quick and family friendly as possible. Getting the nutrients in. The less pots the better! Friendly to fussy eaters!
What's your go to on those days you're just burnt out but still want to do a good job for your family?

Soup machine & slow cooker, honestly you can't beat them for 3 minute prep soups, veg, chicken + sweetcorn, rissoto, chicken bbq and pasta, bolognase, chilli, shepherd's pie, pasta + tuna/mayo, pasta + grated cheese/tomato sauce, veggie ratatouille.

Gnocchi, peas, ham hock and crème fraiche from the 30 Minute Roasting Tin book. It is brilliant and so easy. Don’t leave out the parsley or the lemon juice or it tastes really claggy.

I always post this make ahead dal recipe. I make up jars of it and then on the days I can’t be bothered I just pour the jar mix into a saucepan with double the amount of water.

I do lazy rice with it- microwave 1 part rice to 2 parts boiling water with a pinch of salt and microwave for 10 minutes and leave to stand covered for 10 minutes.

The 30 Minute Roasting Tin book (or maybe it’s called the Quick Roasting Tin book now that I think about it) is great, as there is such minimal prep and r then you put it in the oven and leave it whilst you get on with something else, or sit down, or have a shower or whatever. It’s not like you spend 30 minutes cooking.

I really like her keralan prawn curry too, we have it with flatbreads.

I would also recommend having garlic purée, ginger purée and having chilli flakes in the store cupboard and frozen diced onions in the freezer. Then you never have to chop anything to make your base which can really cut down on time.

The viral Boursin pasta is a hit with my tomato hating DC.
Loads of cherry/small toms, herbs, garlic and olive oil baked with a whole boursin for half and hour. Smush down with some pasta water to loosen and stir though cooked pasta. Lovely.

Here are mine; some are more suppers for a late night:

Heinz Five Beanz on granary toast

Boiled eggs with granary toast

Omelette with whatever leftovers in the fridge eg half an onion, chunk of cheese, some cherry tomatoes, half a pepper…

Jacket potato in the microwave (finished under the grill for a couple of mins to crisp it), tinned tuna, sweetcorn and salad.

Pasta, pesto, some wilted spinach (from the heat of the pasta is fine) and a precooked chicken breast shredded and stirred through. I also like starting with courgette sliced into half moons cooked in a little oil in a frying pan.

A chili con carne with added lentils for extra protein portion from the freezer (batch cooked previously) and added to a packet of rice if you are really pressed for time to cook rice from scratch. Half an avocado on the top for another of your five a day

I know they aren’t really, really nutritious as not homemade but I also eat the soups in the tubs - the big ones kept in the fridge. I’d fry up some leftover bread into croutons to make slightly more of a meal.

Vegetables and peas stir fried in some soy sauce with rice and eggs is always so easy and you can pack in the veg and use up lots of leftover veg.

Another vote for spaghetti bolognaise. We are veggie so use lentils or quorn mince. Do it in the slow cooker.

Chicken pasta soup.

Peel & chop up a couple of carrots, an onion, celery if you have it, maybe butternut, leek, sweet pot. Bit of garlic. Whatever you have really.

Chuck in a big pot with some oil and a pinch of salt, saute and then add some chopped up bacon and chopped chicken. I've used cooked and uncooked, it's all good. Chuck in a few handfuls of pasta, a couple of chicken stock cubes and a grind of pepper and then cover with water and simmer until the pasta is done. The starch from the pasta will thicken the water, but you can add a cornflour slurry if needs be.

And if you can't be arsed to chop anything, you can buy it all pre-chopped fresh or frozen, along with pre-made stock. Prob one of the easiest things I make that I know everyone will reliably eat!

I live alone so mine is a bit different but every time I cook I make 5 portions - 1 to eat, 4 to freeze
Currently in the freezer is cottage pie, chicken and pancetta lasagne, sausage and mash pie, beef stew, chicken pesto pasta bake

I cook almost exclusively off here - you can jump to recipe, alter the quantities and press cook mode so your screen doesn't go black. No weird ingredients and all the recipes work

Brazilian chicken - 6 hours on high in the slow cooker.

1kg chicken breast
2 small red onions
1 lime - zest and juice
1 can coconut milk
100gms peanut butter
Enough tumeric to turn it yellow
pinch of chilli flakes
pinch of salt

Easy as a kick in the arse.

Serve with rice, also great in wraps with lettuce. Usually serves 4-5 adults and 4-5 kids at a time.

I’ve doubled up quantities before and frozen a batch.

I felt like this so tried Simply Cook for inspiration and now there’s no looking back. I make enough for three portions and freeze leftovers. It’s proving very cost effective and dinner is now the best part of the day. I was stuck in a rut of eating the same mediocre stuff Monday to Friday.

Mediterranean veg tray from aldi, Chuck it in a casserole dish with some extra onions and tomatoes

Roast it for 20/30 mins then stir a jar of red pesto through it, cut a block of halloumi or feta up and place on top and then roast for another 10 or so mins

Serve with microwave rice

most of my healthy lazy meals follow the same formula: stick the protein in the air fryer and while it’s cooking, chop up some raw veg and cook a simple carb. So:

Felafel wraps with ready made felafels/Strong Roots veggie bites, hummus and whatever veg your kids like.

Skin on chicken thighs rubbed with a little oil and salt, in the air fryer. Serve with rice and sliced cucumber, and soy/sweet chili sauce.

chicken fillets rubbed with oil and smoked paprika, in the air fryer. Serve with Greek salad, hummus and couscous.

Stovies - chuck sausage, potato, carrot, turnip and onions in a pan with couple of stock cubes and gravy granules and some water and let it simmer for 40 minutes - easy and delicious.

Pasta pesto with broccoli, bacon and mushrooms.

Cook the broccoli in with the pasta for the last few mins. Stir in with the cooked bacon bits and mushrooms. Add a good glug of the pasta water to make it extra saucey and not too gloopy.
