As easy, quick and family friendly as possible. Getting the nutrients in. The less pots the better! Friendly to fussy eaters!
What's your go to on those days you're just burnt out but still want to do a good job for your family?

My kids all like lentil soup. Dice carrots and let them sweat at the bottom of a fairly large pan. Add chopped onion once they've softened a bit. Once they are translucent add a good amount of lentils and stock. I just use stock cubes. Usually vegetable ones but sometimes ham or beef depending on what I've got at the time. Let it simmer until the lentils are soft. Great with oatcakes or fresh bread. I cheat and use the breadmaker.

Bit predictable, but spag bol. Carrots, onions, celery, garlic, mushrooms. Red meat (unless you're a veggie).

If you're open to a different recipes from the standard ones, I like a cook book called The Green Roasting Tin. They're all one pot dishes and have different length cooks on them.

We have an omelette with cut up veg in it for dinner at least twice a week. Either leftover veg or frozen, and a handful of grated cheese. Everyone loves it and it’s very healthy. If still hungry, a slice of bread and butter finishes off the meal.

Otherwise, slow cooker meals with lots of veg, or soups are my go to.

Never underestimate the humble beans on toast. It’s just hard to find good baked beans where I live.

Chicken and potatoes.

In a roasting dish place enough chicken pieces (thighs and legs are best) for your family, then fill in the spaces between them with small potatoes or chunks of potato. Over the lot pour a mix of olive oil, dijon mustard, coriander, honey, turmeric, sumac, pomegranate molasses and lemon juice. Bake.

I do this for my family nearly every week. You can change the spice mix to suit your own tastes also.

Honestly, toddler tapas is always comforting and popular in our house. It involves: Childs favourite plate with some or all of the following: sliced cucumber/carrot/pepper and houmous, cubed cheese, cherry tomatoes, oatcakes with butter/toast with butter.

Pasta peas pesto prawns. Put the peas in with the pasta, drain, stir in pesto and cooked prawns. Serve

A couple jars of whole or diced tomatoes, a couple cans of kidney or white beans, some frozen corn, and a bit of chili powder + cumin. If I’m not short on time I’ll sauté onions in olive oil with maybe a bit of hot pepper before I add the tomatoes and beans. One pot, no fuss. It’s sort of a cross between a stew and a chili.
A quick cornmeal muffin only takes one bowl and a few moments in our kitchen. Muffin liners mean no cookware to clean other than a quick rinse.

Mushroom stroganoff- ´slice big punnet of mushrooms & a red onion, dry fry for 5 mins or so, add bit of oil, paprika, sliced garlic, chopped gherkin & pickled onion, fry for few more minutes. Add splash of brandy, cook off & add sour cream & parsley, stir for few minutes. I sometimes add spinach / leek/ sliced steak coated in seasoned flour if feeling flush (add meat / leeks with mushrooms).

Cook rice & green veg at the same time, 15-20 mins max.

Tray bakes of all sorts - we like chicken thighs or salmon - shove on top of halved new potatoes, peppers, mushrooms, courgette / any random veg really, toss with oil and spices & stick in the oven and forget about it! Fish doesn't need as long so I cook the veg for a bit first and then add. Can add lemon / orange / chorizo if you're feeling fancy.

Gnocchi bake - pour boiling water over gnocchi to soften, drain and add to tin with mushrooms / tomatoes & mozzarella, few basil leaves. Drizzle with oil and bake till veg cooked down and cheese browned. Also
good with squash but this needs roasting for a bit first. Or this one with feta:

Fajitas is always quick and successful in our house
Chop chicken breasts into strips add paprika, ground cumin, chilli powder and oregano.
Stir fry until cooked through and set aside keeping warm
Cut peppers and onions in to strips and stir fry in the same pan
Serve with salsa/guac/sour cream (from a jar for ease), wraps, lettuce etc
