It’s been a crazy week with Halloween planning, school etc, all I really have is lots of chicken breast in the freezer. Not doing big shop until the weekend, but I can nip to the local shop, what should I put with chicken? Would just oven chips and peas be weird?

Parcel each breast up in a layer of baking parchment with a knob of butter, spoon of pesto and optional slice of lemon if available. Layer of tinfoil over the parchment to keep it all in, though you can use string if the parchment is wrapped well. Bake.

I would serve with rice & peas but I am sure chips will work

Bash the fillets until about a cm thick. If you're got it, smother the top of the chicken with pesto, wrap in some streaky bacon then roast.

Have you got any spices in - you could marinade the chicken and hey presto, fake Nandos - I'm sure you could Google for a recipe if needed.

My lot love home made chicken goujons.
Cut the chicken into goujons, coat in seasoned flour, then egg, then breadcrumbs. Shallow fry till golden both sides, and put in oven while you cook the chips.

I'd butterfly it, lightly season with salt and pepper then pan fry, i use a griddle pan.
Passata/chopped tomatoes and make a sauce for pasta.
Any spices such as Cajun/fajita that you could use to rub on it before frying/baking?

bacon and cream cheese? cut a slit in the chicken breast, put cream cheese in and wrap with bacon, bake.

bbq sauce and cheese? cook the chicken, top with cooked bbc sauce and cheese, grill till bubbly. Obvs there are lods of different sauce varieties that could be swapped in, or add bacon?

How is chicken chips and peas weird? Personally I'd make a chicken arrabiata if you have tinned tomatoes and pasta, or a curry but obviously depends what else is in your cupboard

Is cook in a sauce, stock, onion, garlic, veggies, bacon if you have it, wine. Cream and mushrooms - I sometimes blitz the sauce for smooth sauce once cooked

Chicken curry
Bread the chicken and do that with the chips and peas
Fajitas
Slit them, and put in pesto, or garlic & butter, and wrap in bacon or prosciutto.
Stir fry
Some sort of chicken stew
Something with a creamy sauce, like honey mustard or chicken supreme, with mash potatoes.
A tomato based sauce, with peppers mixed through pasta.

Nothing wrong with chicken, chips and peas, just seems a bit bland, dry chicken

Bash up some rice crispies or cornflakes, cut chicken into strips, dip in egg and then into the bashed up cereal and fry in a pan. Bit more exciting that plain chicken and goes well with chips and peas?

I regularly have such a meal. To change it up I have lots of different spice jars with different seasonings, so Cajun, Chargrilled Chicken, Nando's, etc...

I did nando's chicken with McCain fries for dinner the other night. Did the chicken in the air fryer first, then left them to rest while the chips cooked. Probably the yummiest simplest chicken meal I've had in ages! The chicken was delicious!

Mix passata or chopped toms, mustard powder, Worcestershire sauce, honey, garlic and salt & pepper and use to cover chicken in a covered casserole dish. Bake for an hour or more and shred - pulled chicken.
