I'd smell it and dip my finger in it to taste.

If it smelt and tasted ok I'd serve it to my DH and kids but not at a dinner party.

I always judge it based on how long away the expiration date was originally. Like if something always has an expiration date, when purchased, of a month away then going an extra week over before using it is probably neither here nor there but if the original expiration date is a week away on purchase then I wouldn't add another week as you are doubling the product's lifespan which seems unlikely to be safe.

Is it the best before or use by date.
It’s more likely to be best before if it’s a tin, which just means it may have tasted a bit nicer before that date. Use by is different and would not risk that.
