Easy cheap vegetarian meals

I'm vegetarian and have 5 children. I'm looking for inspiration for some new easy and cheap vegetarian meals to make. I feel like I constantly make the same meals. Some things I already make are:

Lentil cottage pie
Lentil spaghetti
Roast veg and pasta
Jacket potatoes with cheese and beans or chilli
5 bean chilli with rice/ wraps
Chick pea curry
Pizza, wedges & salad
Veggie sausages, mash, veg, yorkshires & gravy
Egg, chips & beans
Lentil and sweet potato chilli

Looking for some new exciting ideas and I love spicy food

Oh yes definitely dal. The basic one is just cook your lentils and fry your onions with spices, but there are loads of variations. Most curry recipes can be adapted to have lentils and vegetables as the main ingredient.

Maybe cos it's not super cheap but no-one has mentioned halloumi! I'm not a veggie but it's in several veggie dishes I make.

Roast sweet potato and black bean wraps use a chipotle seasoning mix on the veg and beans, roast with a bit of red onion. Then serve in a wrap with salad and smashed avocado (skip the avo if want to reduce cost).

Vegan hot dogs in pasta with pesto.

Rice paper rolls with baked tofu, salad and herbs with a dipping sauce.

Sweet potato, carrot and "meat"ball Moroccan stew in the slow cooker with rice, bulgar or cous cous.

Dahl with rice (so many different recipes)

All the soups

Bolognese (with loads of roast veg to bulk out the mince - I buy dried TVP in bulk).

Smoky paprika chickpea and butternut risotto with red peppers and onions.

Black turtle bean chilli with brown rice - makes a change from kidney bean chilli. DC love it.

Spinach dahl with home made seedy naan and mint raita

Would you share the recipe for the first and third ones please?

It's Okonomiyaki night tonight hooray :)

  1. Finely chop a cabbage (I use half a cabbage per me, for a decent snack)
  2. Whisk 3 eggs with a tiny bit of oil (sesame oil is lovely) and some soy sauce and add in a few tablespoons of plain flour, mixing to form a batter.
  3. Add the cabbage to the batter mix and stir well
  4. Heat a frying pan, spoon a glob of the mix in and leave for a minute or so before turning over to heat it on the other side
  5. Put on plate, add dipping sauce or mayonnaise etc. Eat.

P.S. I don't bother with the spring onions in the recipe above, though they are very nice.

Veggie moussaka - lentils instead of lamb
Vegetable satay - use peanut butter for the satay sauce
Mexican tostadas- kidney beans, tomatoes, peppers, onions, Mexican spices, served with oven toasted flour tortillas and sour cream
Veggie hotpot - lentils instead of meat

A vote for pasta from me!
A quick and easy meal, with the option to add a meat alternative and/or mushrooms. Topped with grated cheese and served with part baked rolls.
All done within about 20 to 30 minutes, then leave the children to clear up!

HIghly recommend HFW and his Veg Every day book. Not least for his idea of making 2 or 3 dishes then serving them as leftovers in the week in slightly different ways, or freezing some for later.
