Italian, Chinese, Mexican, Indian are the most obvious for me. I think I would be happy with those. What’s considered American cuisine though? I don’t think I would care if I never had British/Irish food again tbh

I don't like English food, but I can cook and make pastry, cakes, puddings, suet puddings, Yorkshire puds, gravey, bread, most sauces etc from scratch. DH likes English food. He'd be like a pig in poo if I cooked stew and dumplings every day.

Can I ask where can I find authentic Nigerian recipes?

My father lived and worked in Benin and Lagos. He came back with a few recipes.

He said he was served "Bush rabbit stew" at a wedding in a remote village. He was told it was a delicacy, but apparently the rabbit had a long tail !

@Goldencup I voted French, not British.

For me the key elements in contrast to my other choices are probably (a) the fish cookery, (b) the finishing touches, particularly sauces, for vegetables, fish and meat, (c) the composition of the meals and (d) the cheeses.

However many countries have wonderful cheeses, so (d) is a bit of an afterthought.

Thanks to boarding school most traditional British foods make me gag when I think about them... however, I love the delicacy of French foods. Indian was included for the absolute breadth in the range of cuisine from Momos in the North to lovely Keralan curries. Kenya, for my love of skumawiki, ugali, Nyama choma. Vietnam due to the wonderful breadth of asian styled, but often brining in the French influence as well. I had to think about this one. Shwarma's are my comfort food - I can live off them (I have done), they are so versatile, so that's the reason Arabic foods are in there.

People querying French? Come on, it’s one of the great cuisines of the world! I’d include it for pastries, casseroles like Boeuf Bourgignon and Pot au Feu, Bouillabaisse, the cheeses and the bread.
I’d also have Indian (particularly Biryanis and Peshwari Naan), Italian, British (for cooked breakfast, roast, cream teas….) and probably Japanese.
