Overnight stay devon / Cornwall recommendations

Looking at possibly having a day or two away in Cornwall or Devon in the next couple of weeks, looking for a relatively nice hotel close to the sea, by the pool…. Any recommendations?

The Pig at Coombe (Devon) or Harlyn Bay (Cornwall). The St Moritz hotel near Polzeath.
