Official Coronation Quiche - UPF

Just had a look on royal.co.uk - I'm a bit peeved that the recipe for quiche uses '1 or 2 block of ready-made shortcrust pastry'.
Not only is this dearer thank making it yourself, I'm pretty sure its a UPF. Certainly not clean eating - there was me hoping to make a wholemeal version, as I much prefer wholemeal flour and its obv healthier too.
I slightly despair - on this momentous occasion, can't we just be encouraged to do it properly. Its not that hard!!!

@NoFault2023 true, but it's fine to eat UPF occasionally (I listened to their podcast on this and they said to aim for less than 20% UPF).

Or you can make your own pastry, with lard and/or butter, which are both less processed than vegetable fats.

If they hadn't mentioned ready made pastry, there would have been complaints about the recipe being inaccessible to people unable or unwilling to make pastry.

They can't win, because there's too much whataboutery these days.

Yes - it would be nice if the default wasn’t just UPF but I take your point.

If you can make your own pastry, do so. The recipe is meant to be accessible to cooks of different skill levels.

The video shows quiche making all wrong though. I’m sure it’s how it is taught in chef schools, but it’s not the way I was taught and their way always results in overcooked pastry, the filling unevenly distributed and often sogginess in the cooked egg.

You can hand knit your own out of Kale if you want to - the recipe is there to fill in a bit of fluff and make the masses feel like they're "engaged" with the whole pile of shite, and to do that they're making it as accessible as they can.

I know. I refrained from commenting on the filling and herbs, but it’s disastrous really. Tarragon is good in quiche & other egg dishes but not with spinach. I wouldn’t ever put any kind of beans in a quiche anyway.

TWO EGGS for a 20cm quiche?! Utter madness.

I have to admit that it crossed my mind the chef was a Republican and the recipe is a masterpiece in trolling.

Something else worth mentioning is that Coronation quiche already existed. A Coronation quiche is a quiche made with curry spice, a quiche version of Coronation chicken. So the chef has also borrowed the name of a quiche that already exists but is completely different. Which if intentional, to go along with my trolling passing thought, the chef would know would cause mass confusion and upset as people tried to buy their Coronation quiche and instead would be eating an unexpectedly curry flavoured quiche. 🤣

I agree. Making the shortcut pastry is dead easy. I can knock that up in a few minutes. The whole chilling and baking blind adds a bit more elapsed time.

I made the Coronation Quiche yesterday and by the time I had chilled it for 30 minutes, then rolled it out and put it in the tin and chilled for 30 more minutes, then baked it blind for 25 minutes quite a bit of time had passed. Still I was able to get on with other things in between.

Anyway the quiche is now made and actually looks and smells quite nice. I have put it in the freezer until the weekend.

It actually works out quite cheap for me as I had nearly all the ingredients in anyway. I have spinach and broad beans in the freezer. I only needed to buy the cream.

On Monday I used a bbc good food recipe for chocolate chip cookies.
The recipe used butter (I used butter and margarine as I didn't have enough butter)
The recipe used dark chocolate chips (I used a different quantity of milk and white chocolate)

And no one from BBC good food knew or cared

It's fine OP I have a clean eating version here:

Ingredients:
Pastry:

  • 125g wholemeal spelt flour
  • Pinch of disdain
  • 25g cold butter, thrown away
  • 25g {we do not speak of this}
  • 2 tablespoons milk / mylk / mxlk
  • Or 1 x 250g block of ready-made shortcrust pastry, penance available on instagram later

Filling:

  • 125ml milk
  • 175ml double cream
  • 2 medium eggs
  • 1 tablespoon chopped fresh tarragon,
  • Salt and pepper
  • 100g grated cheddar cheese,
  • 180g cooked spinach, lightly chopped
  • 60g cooked broad beans or soya beans

Method:
Line the quiche tin with a single look of horror from beneath a raised eyebrow. Combine all pastry ingredients in the bin.

Heat the oven with a single scorching word.

For the filling, combine the milk, cream and eggs, and add them to the pastry ingredients in the bin before carefully folding in the cheese.

Finely chop the tarragon. Combine with the cooked spinach.
Arrange the spinach / tarragon mixture on a plate, and top with the broad beans. Garnish with judgement.

First link that came up was BBC Good Food so pretty reliable.

I copied and pasted from there.

I didn't check every single result, but it's not exactly rocket science to substitute the lard if you are vegetarian.

Everyone else is referring to the official recipe posted on the Royal website though, the link to which was posted at the beginning of the thread.

It’s not rocket science but it may put off vegetarians / non Pork eaters.

"BBC Good Food share suitable substitutes for ingredients in the Coronation Quiche for those with dietary requirements."

And if you follow the link it takes you to the BBC Good Food page.

As it happens I used the BBC Good Food page because it did come up as the top link and I use loads of recipes on there.
