The training for my new job was pretty shit. I have to use a certain document when signing something off when the cost reaches a certain threshold. They didn’t go through the form with me as I was told I wouldn’t use the form for a while so best to go through it then as I’d probably forget.

Come the day I used it and my entire training was “just fill it in”. All I wanted was help with the very first one I did, just some guidance. When I used this as an example of poor training I was told it’s my fault as having one to complete means I’ve left it too late for training (???)

Sometimes I genuinely feel gaslighted in this role.

It's up to your employer to make sure that you are training is fully done, so it couldn't be your fault that you hadn't been trained on any aspects. The onus is on them. But if this is the norm then you've got to let it go and decide if you want to start applying elsewhere.
