To ask for your help deciding what to cook.....

Here's the background. I am a struggling diabetic who has to be very strict about my diet. My husband has chewing and swallowing issues and needs to have soft food. We both have health issues which mean that standing to cook for hours isn't possible. We are both meat eaters. We have two lovely Japanese young women coming to see us in a couple of weeks, who we haven't seen for over 10 years when they stayed with us for two weeks and ate proper home cooked meals with us every day.

What can I cook for them that my husband can eat, doesn't take all day to prepare (or clear up) and can be adapted for me? I can eat something without the carb element of the meal if necessary, but I don't want to be hungry...but what? I want to give them a nice meal, and I am a good home cook. Ideas please! (I am not going to attempt anything Asian)

Beef Bourguignon with mash for those who want it, and some veg for you to have with it. The casserole will take maybe 30 mins to prepare with peeling the veg / browning the meat etc but once its done it just slow cooks in the oven for hours and is very "hands off". Its also super soft once cooked. You could buy pre-prepared mash to save time.

@Snowpaw Nice idea, thank you. DH doesn't like mushrooms but I suppose I could do it without... Although the mushrooms would be good for me. I have just picked them out of his portion before - I will see if I can persuade him that would be good this time.
