Hosting girls, one gluten free, one will only like chicken and one no spice

So about 9 people. I don't want to go to a lot of trouble so either stuff I have made beforehand I can stick in the office or sandwiches, nachos and dip, maybe a spanish tortilla or gluten free quiche. Could also have potato salad and maybe gluten free pasta salad, but is gluten free pasta rubbish? Ideas much appreciated. Don't want to poison anyone.

If the gluten free individual is actually coeliac, chances are nothing made at home will be safe and your best bet is sealed pre-prepared dishes from a supermarket.

Gluten free pasta is great, I serve it a lot and people don’t even notice the difference.

Make some gluten free sandwiches with the genius white bread. Nachos and dips are gluten free as are crisps.

generally beige buffet food is a nightmare for gluten free and the alternatives aren’t great. I’m sure your friends will appreciate your efforts

potatoes and rice are winners for GF

Tex-mex make your own. Chicken fajitas, separate peppers and onions, guac, cheese, sour cream and wraps (or big iceberg leaves for the GF girl.

Is no-spice girl no chilli or no seasoning at all? She can have a plain chicken breast. Leave the chilli out of the salsa and guac and put some fresh chilli on the side so people can add to taste.

Or if no prep immediately beforehand then just get loads of deli bits and premade salads.

Agree you need to check GF preference or allergy

I’d probably do a build your own chicken salad bar. With roasted chickens, leaves, tomatoes, seeds to sprinkle, a variety of dressings, beetroot, grated carrot, cheese, croutons (obviously the GF person can avoid those) etc!

Don't do sandwiches or pasta salad, instead make it all from naturally GF foods.

Any sort of buffet is a nightmare if you have coeliac or an allergy, because you can't control cross contact at all.

Cheese, meat, salad, dips, tortilla chips (many are GF), nairns GF oatcakes if the GF person can have oats. Spanish omelette or crustless quiche is a good addition.

Some nachos are safe, some aren’t so check the label.
Weirdly I can’t eat Waitrose tortilla chips but M&S ones are fine.
Crisps in general are a hazard for me due to seasonings. I don’t eat anything until I’ve seen the label.

And, as someone who could die if I was fed my allergen, I'd definitely rather someone with your attitude never catered for me 🤷🏻‍♀️

Also; not al crisps are Gluten Free so be careful to check the labels if they are celiac

Sorry it is at home - all menopausal women lol. If I make flower tortillas in the airfryer are they gluten free? I think I will opt for majority gluten free to avoid contamination - what about gluten free ciabattas - I loved them. I assume mozarella and all cheese is gluten free so could do that as well with beef tomatoes maybe?

And I can't talk because cheese gives me bad migraines which makes me a nighmare guest but not is not through choice.

Oh and the one who doesn't like spice doesn't like onions, salad or veg. If I have a couples night it's even worse - one won't touch chicken with a barge pole!

Tortilla chips are mostly gluten free. Tortilla wraps aren’t unless you get specifically gluten free ones. I don’t really rate them and would never buy them but others may think they’re nice.

I’d do some marinated chicken (garlic, herbs and lemon, no spice!) jacket potatoes and salad. Everyone can have something and fussy people can leave the bits they don’t like.
