Hosting girls, one gluten free, one will only like chicken and one no spice

So about 9 people. I don't want to go to a lot of trouble so either stuff I have made beforehand I can stick in the office or sandwiches, nachos and dip, maybe a spanish tortilla or gluten free quiche. Could also have potato salad and maybe gluten free pasta salad, but is gluten free pasta rubbish? Ideas much appreciated. Don't want to poison anyone.

If you use the air fryer for non GF food, I wouldn't be using it to make GF food. The cross contamination risk is too high.
I'm ceoliac and make GF nachos, GF fajitas (just buy a separate pack of GF wraps and use the mild spice seasoning) and risotto with garlic bread (GF separate). GF pasta is OK hot but not great cold.
I like a simple anti-pasti buffet; meats, cheese, sundries tomatoes, olives, GF quiche/tortilla dead easy to make and pizzas. Just have a separate GF one. Means everyone is eating the same with minimal fuss.

The issue with preparing food at home is not so much the ingredients but your kitchen being a source of contamination - wooden or plastic utensils and chopping boards that have been used for gluten cannot realistically be made safe, and neither could the air fryer.

Wheat flour can sometimes cause airborne contamination for hours after it was last used, even if you have brand new chopping boards and metal utensils that have been run through the dishwasher.

Make some gluten free sandwiches with the genius white bread. Nachos and dips are gluten free as are crisps.

generally beige buffet food is a nightmare for gluten free and the alternatives aren’t great. I’m sure your friends will appreciate your efforts

potatoes and rice are winners for GF

Actually lots of crisps are not gluten free, same with premade dips and sauces.

OP you really need to read the back of crisps, they will say if they are gluten free or not.

Don’t assume.

Op, speak to gluten free friend as you may find that they prefer to cater for themselves separately to avoid cross contamination.

ZenB pasta is great and will make great pasta salads.

You can get half decent gf pastry (BeRo) in Morrisons or Asda or gf pita bread.

For crisps and potato snacks re as dvthe packets nut the rice based ones are mostly ok.

Just make a big pan of chilli, serve with grated cheese, soured cream, guacamole and chillies on the side. Rice and corn tortillas to accompany it.

Op Tortillas would only be gluten free if made with corn or maize flour. Gluten is from wheat flour so anything containing wheat is no good. M&S will do gluten free sandwich platters. The supermarkets do gf sausage rolls and nuggets etc.

@Soontobe60 Chili generally contains large amounts of spice, including chili powder, and beef. Guacamole uses large amounts of seasoning and spice. This menu won’t work for OP’s guests.

But surely only one requirement, the gluten free, is a health problem? "Only like chicken" and "the one who doesn't like spice doesn't like onions, salad or veg" sound like just taste preferences.

Several coeliac family members here. Gluten free pasta looks a bit pale but otherwise fine. It can go a bit tougher cooled down best (like lots of glute free stuff) severed warm. Genius muffins very pleasant. Cous cous rice and potatoes all naturally gluten free. Kirstys pizza are good too

Do a bring a bowl party! That way it can be mix and match and they can each bring something they are comfortable eating as well as picking at other peoples

Personally, I'd be offering to bring my own. It sounds like cross contamination hell, even though I'd appreciate you trying.

Also, personally, I never touch "may contains" which is another spanner in the works 🫣

This is a nightmare for allergy sufferers - generally bring and share situations means no one else thinks to bring anything GF and I'm left eating just my own and feeling stressed about anyone else taking too generous a portion of it.

I’m coeliac and I take my own food.

I can’t reasonably ask people to cut things on separate chopping boards, or to make sure stack cubes and other little things you wouldn’t think of are gluten free.I mean sandwiches- you would use gluten free bread but you’d have to buy a separate butter incase of contamination and make sure you used a different knife and chopping board. It’s a bloody minefield!

This was after being really i’ll after I was first diagnosed and my friend got me a gluten free pizza - but cooked it on a tray that had normal pizza on before and cut it with the same pizza cutter as all the other pizzas.

Im not really understanding why you need to get gluten free food replacement items eg special gluten free bread, pasta etc.

wouldn’t it just make more sense to make chicken based food that doesn’t contain gluten? And do the usual separation of servings that are useful for groups.

Garlic chicken, corn bread, salsa, and a green salad
Chicken paprika, brown rice, roasted broccoli
Chicken in white wine sauce, white rice, green beans with parmesan
Chicken with polenta crumb, roasted sweet potato with sage, aioli, coriander salad
BBQ chicken legs and thighs, black beans and rice, sweetcorn, charred peppers
Chicken broth pho with rice noodles, shredded veg, limes, fresh herbs to taste
Chicken breast strips, jacket potatoes with butter, tex mex dips, sour cream and guacamole
Chicken and bacon stew with barley, mashed potatoes, roasted vegetables
Salt and pepper chicken, roasted kale, cauliflower rice, avocado salad with crispy bacon topping
Chicken fried rice, crispy seaweed, bamboo and water chestnuts
Chicken risotto, creamy mushrooms, tomato salad, olives

Any combination of the any of the above

Chicken, roast buttenut squash and pea risotto. Lots of garlic, chicken stock and white wine. Ground black pepper, sage and piles or parmesan.
