To ask for your favourite easy/quick midweek meals

Sooo fed up of the "what do you want for tea?", "I dunno, what do you want?" dicussions. Meal planning just means we have that same discussion x5 on the same day.

Would love some easy/quick veggie meal ideas so we don't just end up with veg and a jar of curry 3 times a week.

We couldn't get the hang of a slow cooker.

Omelette and beans. Pasta pesto (add tuna or hot dogs). Cheese and ham toasted with soup. Bread chicken wraps with salad.

Focus on the carb element being the same each week day to help your planning.

Monday: Pasta
Tuesday: Rice
Wednesday: Potatoes
Thursday: Noodles
Friday: Bread

So, meals this week could be roasted vegetable and red lentil tomato pasta, vegetable curry and rice, vegetarian sausages with mash potatoes and veg, hoisin Linda McCartney duck with stir fried veg and noodles, veggie burgers with wedges and salad. Next week - cauliflower cheese gnocchi with salad, sweet potato dal with rice and broccoli, jacket potatoes with fillings, satay veg noodles, halloumi and salad flatbreads with chips. Gives you an element of stability/planning ease but also variety.

Big roasting dish with olive oil:
Gnocchi on one side
Load of vege on the other side
Whole piece of feta on top of the vege - sprinkle with herbs and drizzle with honey
Roast it all

Carbonara is so bloody quick, and you don’t need cream! Just eggs and Parmesan.

Baked potatoes with whatever topping the kids want, is a favourite in our house.

Fajitas.

Stir fry.

Slow cooking is so easy, I love it.

Egg fried rice + tender stem/Pak choi etc

Veggie stir fry

Shakshushka

Omelette and salad

Roast root veg with feta and rocket (not as quick but you can put it in the oven and go and do something else for 45 mins)

Broccoli and cheese pasta bake or any veg pasta

Soup and sandwich

Jacket potatoes/sweet potatoes and salad

Veggie chilli done in the slow cooker (so it cooks while you do something else)

Tomato and mozzarella puff pastry tart and salad, or quiche (make in advance if that helps, it's fine to eat at room temp)

Quesadillas

Stuff on toast - mushrooms; mashed broad beans and feta; tomatoes

This one pan spicy rice is surprisingly tasty. Really quick today prepare and cook and you can chuck in whatever you have to hand.
gnocchi and tomato bake makes a nice change from endless pasta but is just as easy and quick.


For speed you can't beat stir fry with prepared veg and ready cooked noodles. Add cashews or tofu for protein

Slow cooking is so easy, I love it.

I do carbonara with peas, mangetout or asparagus tips more often than with pancetta now. With fried mushrooms it's absolutely amazing, but the green veggies cook in with the pasta so it's easier

Veggie chilli with rice/tacos or in a wrap for burritos. I usually make black bean chilli fry onion, red or green pepper and spices (I usually add some of a sachet of Fajita mix), add a tin of tomatoes and a drained tin of black beans. Cook for about 20 minutes. Heat some tacos shells for a few minutes.

Minestrone - cook onion, garlic, carrots, add tinned tomatoes and vegetable stock. After about 10 minutes add a tin of cannelini beans. I usually cook some pasta shapes (eg macaroni) separately to be quicker then add them in before serving. Serve ciabatta or something on the side.
