@Cherchezlaspice sorry to bother you, was curious about eba and egusi, but can I ask about the melon seed used in this? I had a quick Google but was wondering what these taste like? Are they in the form of a ground meal, like cornmeal? And taste wise, neutral? Bitter? Sweet?

No bother at all!

The melon seeds (egusi) are mulled into a fine flour and cooked into a soup. The taste is sweet and nutty. It’s gorgeous and a pretty good introduction to Nigerian food.

This is an expert deep dive: www.kitchenbutterfly.com/2014/traditional-nigerian-edo-egusi-soup/

This is a possibly more accessible recipe: www.africanbites.com/egusi-soup/

Eba is much more straightforward. It’s fried dried ground fermented cassava that you rehydrate with hot water and eat as a side to Nigerian soups. www.myactivekitchen.com/eba-roll-croissant/

I adore it, but I’ve never met a non-Nigerian that liked it. It’s often quite sour. You might be better off trying a different ‘swallow’ like pounded yam.

Omgoodness @Cherchezlaspice thank you so much, I love to try new foods and am spoilt here in my little corner of London for amazing Turkish/Greek/Cypriot/South American produce.. Mind you, if I went 2 miles down the road it would be a whole other thing.. I was wondering about the melon seeds having experimented with bitter gourd/kerala last week and although so so bitter ( so not like egusi) thought there was something weirdly addictive about it (DD did not agree 😂). Its possible to get stuck in flavour and texture profiles of our childhood foods and it's just a limitation I don't want.
Will 100% be trying. Thank you. Xx

@Wilkolampshade My pleasure! I love sharing food knowledge and I live in a similar (possibly even the same) corner of London and we’re so blessed with the diversity of ingredients and restaurants available. And I love bitter gourd, so you’ve just inspired my dinner! 😁
