Pancake day obviously

I always dread it. I’m a fairly ok cook but there are two things I can’t do, fry anything or mash anything. I burn fried stuff or undercook it and I can never get none lumpy mash.

I had ago at making pancakes for DD and I.

Whatever I did it didn’t work as it came out lumpy and uncooked in the middle.

DD (aged 7) is now crying saying all her friends at school will be having pancakes and it’s not fair – she’s right, from FB I can see at least 20 of the 26 in her class have had pancakes today. She’s stomped off to her room after telling me she hates me.

Just me and her at home so no-one else to have another attempt. I’ve used all my milk, flour and eggs trying to make them, I had several attempts.

Why am I so useless? Tell me I’m an awful mother and she’s never going to forgive me.

DD doesn't like the ready made pancakes (finds them salty) and last year I had one of those ready made batters and it still went wrong!

I hear the oil - it becomes more fluid and then tip it off, this leaves very little oil and stops the pancake being greasy.

Or just use a nonstick pan. I've never heard of frying a pancake tbh. That seems very strange to me. Use a non-stick pan. Heat at level 6 for 5 mins so it's nice and hot. Pour the batter onto the pan and wait until bubbles appear. Then flip.

Perhaps practice a few times and make her a special pancake breakfast?

Using a non stick pan means you need to use very little oil

I don't cook with non-stick pans.

Pancakes are pretty easy. I started them because DS liked breaking eggs to 'cook' but hadn't the attention span for anything that took more than a few minutes...

Its a few years ago now but I think I my recipe involved mixing eggs and flour, then adding milk. Then DH took over the breakfasts and the routine went out of the window, he and DCs chuck things in in random order, and sometimes it's thick and gloopy and sometimes less so. No measuring or anything. It still makes perfectly OK pancakes.

As PPs have said - have the pan hot, tip a small amount of batter in, pour it quickly from side to side then leave, turn over, eat. You barely need any fat in the pan after the first one.

But - the main thing on pancake day is the tossing! I kept a couple of cold small frying pans on the side and put a pancake in each for the DCs to race and try to flip. These are expendable ones so can be dropped and retrieved any number of times. My DC still do this now in their teens....Grin. The quality of pancake for this is irrelevant as you aren't going to eat them - you and DD can have loads of fun then chuck the gloop out for the birds, Win-win!
